We clean the onion, wash it, finely chop it, pour it with vinegar and leave to marinate for 20 minutes. Grind walnut kernels. Wash persimmon and cut into thin slices. When all the ingredients are prepared, we proceed to the formation of the salad. To do this, lay out the products in a small dish in the following sequence:

  1. The first layer is an onion;
  2. The second layer is chicken meat;
  3. The third layer is persimmon;
  4. The fourth layer is nuts.

"Valeria" is a kind of classic salad with crab sticks. The only difference between these dishes is such an ingredient as Korean carrots.

Ingredients:

  • Carrots in Korean - 200 gr.

  • Cherry tomatoes - 200 gr.
  • Leaf lettuce - 1 bunch
  • Honey - 2 tbsp. l.
  • Mustard - 1 tsp
  • Balsamic vinegar - 1 tbsp. l.
  • Salt, ground black pepper, olive oil - to taste

Cooking:

Boil the chicken breast in salted water until fully cooked and cut into plates. Then we put the chicken on the grill pan and lightly dry it on both sides. Then the meat should be cut into large strips.

Wash cherry tomatoes, dry and cut into two parts. Wash lettuce, dry and tear into small pieces with your hands.

Now let's start preparing the dressing. To do this, in a small bowl, mix mustard with honey, salt, pepper, balsamic vinegar and olive oil.

Mix tomatoes, lettuce and chicken meat in a deep bowl, season with dressing and mix everything thoroughly again.

This dish can be easily classified as New Year's light salads. First, it has a very elegant appearance. Secondly, despite the presence of meat in it, it is light enough for the stomach.

  • Ham - 200 gr.
  • Pickled cucumber - 2 pcs.

It is hard to imagine a New Year's holiday without a traditional one. Every year we want to find a replacement for him, but someone from the family will certainly ask: "Will there be Olivier?" And no matter how much you want to replace it with something else, it doesn’t work. And all because it cannot be replaced by anything!

It is as simple as it is delicious. Everything is balanced in it, nothing to subtract, nothing to add.


And this year I designed it in the form of a pig. The link to the recipe was given above.


Everyone knows the classic set of ingredients, these are:

  • boiled meat - 300 gr
  • egg - 4 pcs
  • potatoes - 3 pcs
  • carrots - 1 pc.
  • cucumber (fresh or canned) -2-3 pieces (depending on size)
  • green onion - bunch
  • green peas (canned) - 0.5 cans
  • mayonnaise - to taste
  • salt, pepper - to taste

Cooking:

1. Boil carrots, potatoes and eggs, cool, peel and cut into small cubes. Try not to overcook vegetables so that when cut into cubes they have a shape, and do not fall apart.


2. Boil the meat in salted water, cool and cut also into small cubes. Instead, you can use both ham and sausage.


3. Cucumbers can be used both fresh and canned. Cucumbers are also cut into cubes.


We try to cut all the ingredients of approximately the same size and shape. This way it will look more attractive.

4. Put all the chopped ingredients in a large bowl. You don't need to mix anything.

5. Add chopped green onions.


6. Pour in green peas, from which we carefully drain all the water.

7. Add salt and pepper to taste, mix.

8. Before serving, add mayonnaise and mix gently, trying to keep the “cubes” intact.

9. Beautifully spread in a special form, or on a flat plate. There are many ways to decorate the New Year's Olivier. Exactly as much as the flight of our imagination extends.


I like the option when it is laid out in the form of a Christmas wreath, so we will decorate our cold dish “Pomegranate Bracelet” (which will be discussed below). It's easy enough to set it up this way.

Place a glass in the center of the dish. Put the mass mixed with mayonnaise around the glass. Lightly press it with a spoon, and give the desired shape. Remove the glass and decorate the dish as you wish. You can put a thick layer of dill on it, on which put melted cheese cut in the shape of stars. Garnish with pomegranate seeds, canned corn and grated hard cheese.

Or cut bells out of cheese, ribbons out of pickles. Form the dish in the form of a cake, and decorate it as you like.

  • boiled carrots - 1 large
  • boiled potatoes - 2 pcs
  • cucumber - 200 gr

  • salt to taste


For sauce:

  • canned white beans - 100 gr
  • mayonnaise - 150 - 200 gr
  • garlic - 1 clove
  • dill - 2 sprigs

For snowmen:

  • quail eggs - 4 pcs
  • green onion - 2 feathers
  • boiled carrots - 0.5 pcs
  • carnations for eyes and buttons

Cooking:

1. Prepare the sauce. To do this, place beans and garlic in a blender bowl and mash into a puree. Separately chop the dill for flavor and add it to the resulting mixture.


Mix with mayonnaise and set aside for now.


2. boiled eggs cut into two halves and remove the yolk. Mash it with a fork and pour in one, maybe a little more, a spoonful of sauce. Mix until smooth and fill the halves of the proteins.

If necessary, add a little salt to each ingredient. But you can do without it. It's a matter of taste here!

3. Prepare a dish on which we will collect all the components. The first layer will be potatoes. Grate it directly over the dish, and then level it with a fork, giving it a round or square shape.


Lubricate with a small amount of sauce, while not pressing the potatoes too much. It is desirable to make the layers loose, this is precisely the way the tenderness of the finished dish is achieved.

4. The next layer will be carrots. Three of it right above the dish, level it and pour over the sauce.

5. Then lay out the cubes of chopped ham. Slightly "pull" them down to cover the bright carrots. The layer also needs sauce.


6. Cucumbers also crumble into cubes and put in the next layer. Pour the rest of the sauce over them and spread it evenly.

7. Place the stuffed eggs on top of them with the convex side up. And if cucumber greens are visible between them, then it should be covered with mayonnaise. Also smear the side walls with mayonnaise.


8. With the help of cheese, we will create snowdrifts. To do this, right above our design, three hard cheese. And it is exactly like a snowball should cover the entire surface of our treat.


9. We make snowmen. Cut off the ends from the eggs, and in the places of the cut, connect the two halves with a toothpick. She should still stick out overhead.

Cut out two circles from carrots, one larger and the other smaller, and plant them sequentially on the tip. This is our hat. We make a nose from carrots, and eyes and buttons from carnations.

This is also a new recipe, and is copyrighted. It is based on another interesting and more famous analogue of the Snow Queen. But I thought how long the queen would show off on the festive table alone, and I prepared the King for her. I think she will be happy.


The difference between these recipes is in the composition of the ingredients and in the layout of the layers. And cooking it is not difficult at all!

We will need:

  • slightly salted red fish (I have salmon) - 150 gr
  • surimi sticks (crab) - 250 gr

  • vinegar 9% - 1 tbsp. a spoon

For decoration we will use fresh herbs and red caviar.

Cooking:

You should start cooking in advance, because it takes a lot of time to prepare. And although there is no need to cook anything here, it still requires enough to clean, cut and decompose.

1. If you like salads with onions, you can use it here too. If you want to make the dish more tender, without onion notes of taste, then do not add.

Onions can be cut into cubes or half rings and pour over with boiling water, or pickle.


I cut into very thin half rings and marinated. Next time I will cut into cubes so that it is not felt at all. And marinated. After the onion has stood for 10 minutes, the marinade should be drained, and the onion should be washed thoroughly. Try it, it should not be sour, it can spoil the whole taste.


3. Separate the proteins from the yolks. Grind half of the proteins on a medium grater, and half on a fine one. Mash the yolks with a fork.


4. Peel the apple from the rough skin and rub it on a coarse grater, pour in the lemon juice and mix. Punch the nuts in a blender, and rub the curds on a grater.


To make this easier, they should be held in freezer 30 minutes.

5. Each of the components that are crushed and grated, except for small proteins and nuts, mix with a small amount of mayonnaise. Each of them in their own bowl. You do not need to add a lot of sauce, otherwise the dish will turn out to be too rich.

6. Set a detachable form on a large dish and lay out the layers in a certain sequence.
