They are interesting, varied, allow you to "create" with taste and form from the heart. In a word, not a single housewife will hurt to master a couple of recipes for making fruit snacks on skewers. Believe me, they will come in handy more than once.

Fruit canape - the highlight of the festive table

It is not possible to establish for certain the exact time and place of the birth of appetizing baby sandwiches - and even more so to find out whose smart head guessed to string not only meat and cheese, but also fragrant fruits on a wooden skewer - now it is not possible. According to linguists, the very word "canape" came to us from ancient Greece, where it sounded like "konops" and served to refer to small insects - like a mosquito or mosquito. The Egyptians, and after them the Romans, adopted the Greek term, modified it to "conopeum" and began to call so beds with a net from uninvited blood-sucking guests. Over time, the word traveler moved from Latin to European languages and firmly settled in French, for some unknown reason, clinging no longer to a bed with a canopy, but to a miniature sofa with a curved back. So…

And then solid secrets. Whether the French remembered the original meaning of the term "canapes" and called snack sandwiches "mosquitoes" for their small size. Whether the cook, with a particularly violent imagination, saw in the pieces of appetizing food, folded in a pile, a resemblance to his favorite piece of furniture. Or maybe it's about absorbing unusual snack it was most convenient just on such sofas, slowly sipping wine from a glass and conducting a leisurely dialogue with his interlocutor.

Bones from cherries when preparing canapés are still better to remove

Whatever the case, one thing is certain: the fun idea caught on, gained popularity and gave rise to dozens of different, but invariably tasty recipes. There are at least five reasons for this:

  1. Fruit canapes are tasty, juicy and fragrant.
  2. If you do not set out to create some absolutely incredible composition from a dozen different ingredients, you can cook a delicacy in no time. For example, strawberry-banana "canapes" will take a quarter of an hour from a skilled housewife.
  3. Find a recipe fruit salad or a cake that would be to the taste of all the guests to a single one, it is impossible. But out of half a dozen different options fruit sandwiches, even the most capricious picky will pick up something suitable for himself.
  4. Canapes are universal. They will perfectly play the role of a dessert at a family feast or a buffet table, they will take pride of place on children's table, and in case they will serve gourmet snack to hot drinks. Let's say to white wine suitable "turrets" with tangerines, kiwi, apricots; melon and strawberries are combined with red. Sweet liqueurs are usually eaten with grapes and pears; cognac, in addition to the traditional slice of lemon, loves the company of apples and juicy peach, and the taste of champagne is perfectly set off by pineapple and watermelon.
  5. Making a fruit snack is pure creativity. You can not only use any fruits and berries of your choice, but also boldly combine them with other ingredients: chocolate, marshmallows, mastic, nuts, marmalade. Sometimes even ham and cheese are used. Complete freedom of creativity and no boundaries!

By tradition, it is customary to serve 3-4 varieties of canapes with different fillings. Moreover, it is advisable to calculate in advance the total number of snacks so that each guest has at least 8 miniature sandwiches. Given that canapes are a bite-sized treat, they can fly off the plate in a matter of minutes, and no one should be left behind.

How to cut fruit beautifully

The easiest way out is to take a knife and simply chop the washed and peeled fruits into cubes or slices. Cheap and cheerful, but inefficient in terms of wasted time. Yes, and the beauty of future "canapes" will suffer, since not everyone will be able to fit hand-cut pieces to the same size, and different-sized slices will greatly spoil the appearance of the snack.

The neater the pieces, the more effective the result.

If you have a special cutting spoon for watermelon and melon in your kitchen, use it. Perfectly smooth multi-colored spheres on skewers always look impressive.

Any large fruit with not too dense pulp can be turned into balls.

With the help of cookie cutters, you can turn fruit slices into shapes of any complexity.

A real masterpiece in miniature

If you are seriously passionate about the topic of canapes and are going to regularly treat guests and homemade sweet "kebabs", it does not hurt to purchase a special device for cutting berries and fruits into pieces. In the budget version, it will be replaced by an ordinary egg cutter.

The slices will look the same

The most advanced cooks will come to the aid of a special syringe for canapés. Sequentially cut with it the pieces of fruit selected for treats, press the piston, and the finished delicacy will be on your plate. It remains only to fasten it with an elegant skewer. Just as easily, the syringe will cope with pieces of biscuit, marshmallow, marmalade and other goodies, if it occurs to you to add them to your creation.

Don't have a cooking syringe? Take a regular one, cut off the top of it

Remember that fruit is a perishable product. They quickly give juice, darken and lose their shape, so you need to cook a delicacy shortly before serving, sprinkling pieces for greater safety. lemon juice.

Step by step fruit canape recipes

So who are you going to feed? Business partners, old friends, relatives at a family holiday? Then pay attention to the recipes for fruit canapes with cheese and ham. An unusual flavor combination will arouse interest and give your evening a slight touch of aristocracy.

For adults

With grapes and cheese

You will need:

  • 100 g of cheese;
  • 100 g green or blue grapes(try to get a seedless variety).

Cooking:

Hard cheeses go well with grapes: Gouda, Maasdam, Edam, Dutch, Parmesan. However, soft curd cheeses with mold - for example, Brie - will be here in their place. If you want, make a mix of two or three different varieties, shading their taste with walnut halves, almonds, strawberries, slices of exotic mango or thin leaves of fresh tarragon.

The classic version of cheese-grape canpe is far from the only one.

With melon and Parma ham

You will need:

  • 0.5 kg of melon;
  • 200 g goat cheese;
  • 100 g Parma ham, sliced;
  • 1 st. l. olive oil;
  • half a lemon;
  • salt, pepper to taste.

Cooking:

  1. Cut the melon in half, remove the seeds, and cut the flesh into cubes or - using a special spoon - into balls.

    In the absence of a cutting spoon, a simple dessert will do.

  2. Mix oil, juice of half a lemon, salt and pepper. Pour the marinade over the prepared pieces of melon and leave them alone for a quarter of an hour to let the pulp soak.

    The result will be better if you beat the mixture lightly with a whisk

  3. Cut the goat cheese as you see fit.

    Sprinkle the cheese with chopped basil, if desired.

  4. Randomly thread slices of melon and cheese, a slice of ham on a skewer, and then put the canapes in the refrigerator.

    The taste of the delicacy will be beyond praise

  5. The appetizer should be served chilled, with semi-dry red or white wine.

The combination of melon and Parma ham is considered a classic and does not need additions, but if you have a desire to brighten the taste of canapés, add basil leaves, arugula or pieces of kiwi pulp to the indicated ingredients. In addition, the melon itself, on occasion, can easily be “replaced” by a juicy pear.

With pear and Dor Blue cheese

You will need:

  • 1-2 pears;
  • 100 g Dor Blue cheese;
  • 2 tbsp. l. finely chopped walnuts;
  • a little olive oil;
  • juice of half a lemon.

Cooking:

Lemon with marmalade and cheese

And here is a completely incredible, but attractive combination:

  • hard cheese;
  • the same amount of marmalade;
  • half a lemon.

Cooking:

On a plate, such an appetizer usually does not lie down.

For children and older sweet tooth

But enough exotic! Let's talk about simpler recipes, where there will be no such savory food combinations. For example, what could be more traditional and tastier than strawberries and chocolate?

Bananas, strawberries and marshmallows in chocolate

You will need:

  • banana;
  • a handful of strawberries;
  • multi-colored marshmallow;
  • half a bar of dark chocolate.

Cooking:

  1. Peel banana and cut into slices.

    Sprinkle banana with lemon juice to keep it from turning brown.

  2. Wash strawberries and remove stems.

    Berries should be the same size

  3. If the marshmallow is large, cut it into pieces the size of strawberries. Leave the small one as it is.

    Multi-colored marshmallow looks festive

  4. Melt the chocolate in a water bath.

    If you want to make the mass less thick, add a spoon or two of milk to it.

  5. String prepared pieces of fruit and marshmallows on wooden sticks, pour over chocolate and let cool.

    Canape will appeal to both children and adults with a sweet tooth

If the combination of marshmallows and chocolate seems too sweet, remove one of the sweet ingredients from the recipe or prepare two versions of canapés with a sweetener for every taste.

No one leaves the party disappointed.

Jelly on skewers

You will need:

  • a bag of grape jelly;
  • a bag of strawberry jelly;
  • a handful of grapes;
  • a handful of strawberries;
  • ice molds.

Cooking:

Fruit platter

You will need:

  • apples;
  • canned pineapple;
  • kiwi;
  • grape;
  • Strawberry;
  • blueberry.

Cooking:

  1. Wash all fruits. Peel apples, remove seeds. Cut the pulp into small pieces.

    Look for sweet varieties of apples on the market, such as Kitayka, Medok, Belarusian apple

  2. Peel and cut the kiwi.

    Treat loved ones with a fragrant rainbow on a skewer

The fruits in the above recipe can be replaced by others without any damage to the taste. For example, use canned peaches instead of pineapple, soft pear instead of apple, or raspberries instead of blueberries.

And also pay attention to the combinations:

  • Banana, kiwi and tangerine. The fruits will need to be peeled, cut the banana and kiwi, divide the tangerine into slices, and then, in any order, put all this fragrant company on wooden skewers. Everything! Sweet, but tinted with a slight sourness, and therefore even more delicious dessert ready.
  • Green grapes, kiwi and pineapple. Here the situation will be reversed: a sweet yellow tropical fruit will soften the sourness of its green neighbors. For those who fail to get a pineapple for the holiday, it will be replaced by an orange.
  • Banana, orange and pear.
  • Strawberries and banana.
  • Apple, pear, red orange.
  • Grapes and melons.

Canape with salmon and black caviar

Snacks on skewers are very common in catering establishments. Any event with a large number of guests is most often accompanied by a feast, where snacks take pride of place. And among them - canapes, or snacks on skewers.

Such an appetizer is formed from several ingredients - usually three or four, which combine well with each other and create an interesting flavor range. Products are cut into small pieces and alternately strung on special skewers or simply for toothpicks.

It is convenient to take canapes - after all, there is something to hold them for, they are convenient to eat - just for one bite. Such snacks look elegant and festive - both because of the skewers themselves, which are sold in a huge variety of all colors, and because of the range of products - very often chefs select products based not only on their taste, but also on color.

There are canapés based on bread, meaning it is a must - and usually the first - part of the appetizer. It is customary to combine it with something salty - for example, ham or fish. There can be simple vegetable compositions, as well as more sophisticated ones, using seafood or expensive cheeses.

As part of one canape, it is customary to use products of the same shape and size. For example, only squares or only circles. This makes the snack more beautiful and reliable.

  2. In fact, for such snacks, you can take anything - Bell pepper, salted fish, olives and black olives, pieces of fruit, ham and much more, but we have the simplest canapes with sausage and cheese. For freshness, add cucumber and parsley leaves.
  3. To prepare sausage and cheese canapes on skewers, take the products from the list. How much food to take depends on the number of eaters and your desire, so I indicated an arbitrary mass.
  4. Cut bread, cheese and sausage about 1 centimeter thick. I cut the cucumber diagonally to increase the area. I have special cutouts that greatly reduce the cooking time for these little snacks. Read more:
  5. We cut out with a cutting shape, picking up bread, cheese, sausage and cucumber in turn. If there are no cuttings, then you will have to wield a knife, cutting out squares, triangles or rhombuses.

Canape ladybug

  • Mozzarella - 2 balls
  • Cherry tomatoes - 10 pcs.
  • Basil - 0.5 bunch
  • Salt - to taste
  • Ground black pepper - to taste
  • Balsamic vinegar / cream - to taste

Cooking method:

Ham and Cheese Canape is a very simple and very tasty appetizer that allows for a wide variety of designs. I decided to focus on one basic technique - rolling ham and cheese into a roll. But I will show how you can use different types of ham and different types of cheese here.

Ingredients:

  • Bread for toast - 2 pieces
  • Sliced ham - 4 pieces
  • Cheese hard slicing- 2 pieces
  • Philadelphia cheese - 2 tbsp
  • Melted cheese for toast - 1 piece

Cooking method:

  1. So, to prepare delicious canapés with ham and cheese, we will prepare the following products: we will have ordinary pressed ham from sliced \u200b\u200b(in my opinion, it is the most common) and boiled prosciutto. And let's take hard cheese from sliced, melted for toast and Philadelphia. A note about the hard cut - it should be without holes.
  2. Fry the bread in a toaster on low power to golden.
  3. We cut off the crusts from the bread, cut the pieces lengthwise into 2 parts, and across - into 4.
  4. A layer of dense ham is thickly spread with Philadelphia cheese.
  5. We roll the ham with cheese into a roll. If you have the time and desire to make absolutely clean cuts, it is better to freeze this type of workpiece in the freezer until the cheese hardens. I’m doing it for speed here, so I’m showing what happens without freezing.
  6. We cut off the side “ears” of the roll, they are still empty, because the ham was round. Cut into 4 parts, pierce them with toothpicks and pin to bread.
  7. A pair of "hard cheese - dense ham", in principle, can be arranged in different ways. You can cheese on top - ham on the bottom, you can vice versa.
  8. Further - everything is exactly the same: they rolled up the roll, cut off the sides with voids, cut the middle into plump washers.
  9. And again - they stumbled cheese and ham spirals on toothpicks, pinned on top of the bread.
  10. Prosciutto - either smoked or boiled - is less stable than pressed ham. Therefore, it is desirable to lay it on top of a piece of hard cheese so that the cheese, as more stable, is on the outside. I will not attach a photo of twisting the roll and cutting it into pucks.
  11. And in a pair of pressed ham - cheese for toast on top (i.e. inside), on the contrary, there must be cheese. Because if it is placed outside, it will, firstly, collect all the debris, and secondly, fingerprints and other clamps will be clearly visible on its shiny surface. In general, we hide it in a ham.
  12. Pieces of cheese and ham sliced \u200b\u200bare of different thicknesses and different sizes. Therefore, if you see that the rolls are too thin, I can also recommend this trick: 2 small washers - for one toothpick. delicious canapes with ham and cheese are ready.
  13. Here is such a canapeshny cheese and ham platter we can bungle together in the shortest possible time!

  2. Olives are pitted, black.
  3. From chicken eggs we only need the yolk. We will use raw carrots, and fresh parsley. Add salt as desired.
  4. Our New Year's canapes are chicken figurines. The head is modeled from cheese, yolk and mayonnaise. The cheese is passed through a fine grater into a separate bowl.
  5. Yolks are also passed on a fine grater.
  6. Grated cheese is combined with yolks and seasoned with mayonnaise. You can add a couple of pinches of salt to taste. Then the ingredients are mixed into a salad.
  7. Miniature balls roll from the cheese salad. The balls are covered with foil and sent to the refrigerator to cool.

Snack Russian server

You can stuff “ice cubes” with anything, not only with red caviar - red fish, krill and crab meat are also suitable. The main thing is to know how to make hollow cubes from daikon. And for this, in addition to the daikon, you definitely need a narrow sharp knife. Moreover, sharp not only in terms of the sharpness of the blade, but with a sharp tip, a blunt one will not work in any case. Without such a knife, do not take up the recipe - spend time, spoil the products, and the result will be terrible.

Ingredients:

  • Daikon - 1 pc.
  • Red caviar - 5 tablespoons
  • Water - 400 ml

Cooking method:

  1. We clean the daikon. We cut it into washers about 5 cm thick. Plus or minus - not terrible. Cut out cubes from pucks.
  2. In each cube we cut the contours of the notch, but without bringing the knife to the bottom. Focus on a wall thickness of about 5 mm. Carving knives can be made thinner, but ordinary kitchen knives are better not to risk
  3. Remember that we did not reach the bottom with the tip of a knife? So, now we need to stick it on the side down there and move it.
  4. But without cutting through the side walls. This procedure is repeated on two adjacent sides. Those. from above, we cut out the walls of the inner cube, and from two adjacent sides we cut its bottom, we got two slots there.
  5. With the tip of a knife, we pick up the inner cube and pick it out. If it does not want to get out, we deepen the cuts in those places where we feel resistance.
  6. We place the hollow cubes in ice water and put in the refrigerator until almost serving. Without this procedure, the daikon will, firstly, be too bitter. Its taste will kill the caviar.
  7. After soaking, it softens so that they harmonize. And secondly, soaking in ice water makes the daikon more crispy and allows it to keep a presentable appearance on the table longer.
  8. Before serving, be sure to let the cubes drain. To do this, they should be placed with the holes down.
  9. We fill the cubes with caviar and ... now let the caviar drain. In me, at least, she has allocated some amount of orange liquid.
  10. After I wet it, nothing else dripped, but at the first moment there was liquid. Maybe, of course, it depends on the caviar, I don’t know. But keep this point in mind, just in case.
  11. Looks appetizer "Russian North", as you can see, very impressive. The bite and taste are no less interesting than the look. Daikon is crunchy, caviar is firm, one is unsalted, the other is salty… In short, just try it!

Canapes on the festive table recipes with photos

Canape on skewers is a convenient form of tiny food on the festive table. These are small sandwiches, sometimes fastened with a skewer, which are taken with hands and completely put in the mouth, as they say "one bite".

We cook from the products that you find at home, in the refrigerator. The main thing is to skillfully put together a beautiful composition, which is not always possible. Therefore, it is important to know the basic technological principles, useful tips and tips for making canapés.

  • More often, an appetizer is made out on a small slice. fresh bread 0.5-1 cm thick. Sometimes they are dried in a toaster, oven or fried in a pan. Add spices and oil.
  • The basis of mini snacks is biscuits or unleavened crackers, puff pastries, even slices of cheese or fresh vegetables.
  • In the middle of each mini-sandwich, you can stick a small fork, a colored skewer.
  • Convenient snacks measuring 3×3 cm, weighing 80 grams. Therefore, the components are cut very finely.
  • Each product is cut so that it completely covers the bottom layer without protruding beyond the base.
  • Any products are used for cooking: hard-boiled eggs, various oils, sausages, processed cheese, cheese, cheese. Herring, sprat, vegetables, pates, olives, grapes, red fish, radishes, boiled carrots, fresh cucumber, lemon, etc.
  • Bread is cut out with a metal mold for squeezing cookies on dough. But in order to avoid waste, the buttered crumb is cut into squares, rhombuses, rectangles.
  • You can decorate the dish in an original way by smashing the oil with a blender with herbs, nuts, boiled yolk, lemon juice, horseradish, cheese, mustard. Depending on the addition products, the mass will acquire a beautiful color. They precipitate it on the cut out figures using a confectionery syringe or a bag with a nozzle.
  • A good combination of whipped cheese pasta, boiled eggs, garlic and mayonnaise.
  • Serve food, 5-6 pieces, laid out on a dish or placed in a vase. Sometimes the dish is decorated with leaves fresh lettuce, greens or napkins.

What is a canapé? These are small and very appetizing looking sandwiches. You can give them any shape with the help of cut molds and even a confectionery syringe (you will find an example in this article), and fasten small pieces with multi-colored skewers.

It is hard to imagine a more elegant dish than a dish with beautiful (and, mind you, very tasty!) Canapes. Children adore them, so for children's parties there will be canapes the best choice central dish on the festive table.

But adults also love this wonderful snack very much - it looks appetizing, the tastes are very diverse, and there is no risk of overeating - after all, canapes are very small in volume. Therefore, on any festive table, not to mention New Year's, a dish with canapes must be put.

But you will have to tinker with cooking. There is no particular difficulty, but everything must be done carefully, by the way, you can invite children to cook - for them, collecting multi-colored canapes will be like an exciting game. After all, in fact, a canape is a constructor, and products are its details.

It remains only to assemble our food designs so that everything looks appetizing and beautiful, as in the photo below.

Today we will look at 7 simple recipes delicious and beautiful canapes. So let's get started.

Cherry tomatoes are the perfect product for making canapés, small and delicious. We will also need wheat croutons (you can buy ready-made ones, you can dry it yourself, who doesn’t like croutons - just cut into pieces white bread). Parsley sprigs, mustard and thin slices of smoked bacon.

Assembly is very easy. We spread a slice of bread with mustard, roll up the bacon and put it on the bread. From above we attach a sprig of greenery and press it with a finger. The tomato is already strung on a skewer, pricked from above. All! The first one went...

For this type of canapé, we need pieces of a white loaf, thinly sliced ham slices, round cucumber slices, small canned mushrooms and mayonnaise with eggs (grind the protein and yolk separately on a grater). Yes, there is also a green note - a sprig of parsley.

You will also need skewers and a cookie cutter to cut out the base of the bread. From one piece of loaf, 2 bases for canapés are obtained.

We string a small champignon mushroom in advance on a skewer. Put a slice of fresh cucumber on a piece of figuratively cut loaf.

It is better to take bacon in slices or ask the store to cut it for you whole piece, since it is unlikely that it will be possible to cut it evenly and thinly. On a slice of bacon, on one side, put half a spoonful of mayonnaise and grated protein. Roll up the bacon.

Now we dip each end of our roll in mayonnaise and yolk.

Add a sprig of parsley between the mushroom and the roll. All this is pierced with a skewer to secure. The second version of the canape is ready.

This type of canape is probably the most difficult in terms of the cooking process, since we need to make round slices of bread, potatoes and also make an intermediate layer of soft white cheese.

Bread is needed Borodinsky - black and fragrant. Onions - with feathers, potatoes need to be boiled in their uniforms and not peeled before slicing to make it easier to form our circles. We will free the herring from the stones with the help of tweezers, cut it into rectangular pieces - as in the photo, not small ones.

Also an important element - a confectionery or any other large-sized syringe - it will be convenient for them to form layers of canapés of the same shape, the appearance of our sandwiches will be very neat due to smooth edges.

Let's cut first boiled potatoes in uniform slices of medium thickness.

Now with a syringe we squeeze out a round from Borodino bread. With your finger, lightly press the bread layer into the syringe - make room for the cheese layer.

Scoop up the cheese with a teaspoon and tamp it on top of the bread into our syringe.

Squeeze out another round with a syringe mold - from potatoes.

Now we cut off the onion feather of the same length as our piece of herring and prick it on a skewer with a “sail”.

Now - the most interesting. We stick the skewer into the middle of the potato round and with a careful but clear movement squeeze out our round canapes with a piston.

This is roughly what it looks like.

And here is the beautiful end result -

Let's take a few slices of a white loaf, lightly salted red fish (by the way, I recently posted a chic one - be sure to check it out), pieces of pickled ginger, butter, lemon and dill.

Finely chop the green dill and mix with a piece of softened butter.

We cut circles from a loaf using any suitable shape.

Spread this oil on bread and prick a slice of lemon on a skewer.

Put a piece of ginger on one edge of the fish slice and roll it into a roll. We put the roll on the missed bread and prick the top with a skewer with lemon.

Very simple and very tasty!

Everything is very simple here - we cut hard cheese into thick squares in advance, bell pepper, pieces canned pineapple and open a jar of pitted black olives.

We assemble the structure on a skewer - we chop an olive, pineapple, a piece of pepper and at the bottom - the base, cheese.

A very simple canape, but it looks very beautiful!

Prepare long thin strips-rectangles raw smoked sausage, loaf slices, Philadelphia cheese or similar, slices of fresh green cucumber, pitted olives and dill sprigs to decorate our canapés. Well, skewers, of course, where would we be without them!

We cut out rounds from the loaf with the help of molds. Spread each bread circle with cheese.

On top we pile a piece of cucumber and a rolled sausage roll.

We put a sprig of dill on the roll, with a skewer, with an olive previously chopped on it, we pierce our entire multi-storey building.

As they say, sleight of hand and no fraud 🙂

In this canape recipe, ours will do without skewers - you don’t need to pierce anything. And we only need ready-made small tartlets, Philadelphia cheese, dill and, of course, red caviar.

With a spoon, fill each tartlet with cheese mixed with finely chopped dill. Put red caviar on top with a spoon.

If you make at least 5-6 pieces of each type of canape, we will get a magnificent, bright, picturesque and very appetizing dish, which, most likely, your guests and household members will devastate first. After all, such beauty on the festive table is hard to ignore 🙂
