Fry just a little until the minced meat changes color (about 3 minutes). Knead with a spoon so that there are no large lumps. Cut the tomatoes into small cubes, add to the minced meat. Fry for a couple more minutes. Then salt, throw dry herbs (basil and oregano), put ketchup and simmer for another 5 minutes. It should turn out juicy (but not floating in liquid!) Sauce. Add chopped garlic, simmer for a couple more minutes and leave to cool under the lid. Mushroom sauce: chop the onion, fry on vegetable oil until golden. Add chopped mushrooms. Better, of course, fresh, but I didn’t have fresh ones, so I used canned ones (from a can). Salt, mix and continue to fry until the mushrooms are reddened. Then we put the flour, mix again and add sour cream (2 tbsp), a little water and bring to a state of very thick jelly. Approximately like this. We leave our sauces to cool to a warm state. Next, we begin to form a roll. We spread the pita bread on the table, cut across almost in half. One part should turn out a little more (about 5 centimeters). On the first, longer part, lay out the meat sauce, not thick, but evenly. Sprinkle with grated cheese and dill. We put the second, short part of the pita bread on top, aligning the rounded edges. Lay out mushroom sauce, also not very thick, but evenly. Sprinkle with grated cheese and dill. We begin to carefully roll the roll, starting from the combined rounded edge. Here it becomes clear why the second layer was shortened - they will be combined. The resulting roll is carefully transferred to a greased form and spread around the circumference. We do the same again with the second pita bread and fill in the remaining place in the form. Ready to fill. We break the eggs with a whisk, add the remaining sour cream (3 tablespoons), grated cheese, add a little salt, stir and pour our roll. We send it to the oven preheated to 200 C for 20 minutes. Time is approximate. Our “omelet” should grab well and the cheese will melt. That, in fact, is all! You can cut and eat.
