  • a glass of cream;
  • 15-25 g of oil;
  • 20 g flour;
  • half a spoonful of salt;
  • a couple pinches of pepper.

Sift the flour into the bottom of the saucepan and, with constant stirring, fry it until a golden hue appears. Then put a piece of butter and, kneading it with a wooden spatula, fry for two or three minutes. Pour in the cream in small portions, breaking up all the lumps.
