I constantly hear from friends and clients that it is hard for them to eat without meat. In general, it is tasteless, and you will not prepare (in terms of portion sizes).

Vegetarian dinner
In fact, I (now already) know MANY delicious, healthy and very nutritious dishes WITHOUT meat or with very little of it.

Therefore, in continuation I am writing a very practical post: How to cook dinner WITHOUT meat. Well, almost no meat.

I want to give a warning. Before one fine evening (or not very beautiful - as anyone likes) you solemnly and with a smile on your face put a plate of tasty (in your opinion) and healthy vegetarian dish on the table in front of the household, prepare your relatives. No need to rush from one extreme to another!

If your husband and children are used to eating chop with potatoes and sauce for dinner / lunch, or meat in a pot, and at the same time, vegetables in their understanding are what modestly lies next to the plate to decorate this very plate, then I do not advise you to act hastily. I propose a step by step system. weaning home (and yourself) from the constant eating of meat.

So, the steps to getting used to vegetable dishes:

  • Step 1: Gradually DECREASE the amount of meat per serving. Continue to cook the chop, but at the same time the number of "decorations" on the plate (vegetables) should gradually increase. For starters, you can not touch the potatoes, but it is advisable to reduce its amount over time ( according to the rules of division of the plate Potatoes are categorized as "Cereals"). If the meat is in a pot, then everything is even easier. Put in more vegetables. No one will notice the change!
  • Step 2: Replace meat with fish. In especially "severe" cases - chicken. (I know people who never, under any circumstances, touch fish or other seafood). If you are lucky, and everything in your family is eaten, then the scope of imagination is not limited!
  • Step 3: When households get used to fish, and chicken, and seafood, then it's time to gradually introduce legumes or eggs INSTEAD OF meat products. Or cheese and seeds. All of these foods are excellent sources of protein, while also increasing satiety.

Starting from step 2, gradually increase the amount of vegetables in your meals GOOD quality fats while reducing the amount of protein products. Such food is digested better, and there are more benefits from it.

Sharing a couple of recipes from my menu this week.

I made double portions - to save time and money. How many servings you will make is up to you. Therefore, the number of products is calculated for 1 day.

Both recipes can be made TOTALLY vegetarian. Details are below.


Chicken with vegetables and rice - for 4 persons

(I took 2 (!) chicken breasts weighing 250 grams for 4 people - there were NO dissatisfied ones)

You will need:


  • Chicken breasts - 2 pcs. (250 grams)
  • Olive oil for frying
  • Onion - 1 pc.
  • Garlic - 3 cloves
  • Eggplant - 1 piece
  • Sweet pepper - 2 pcs.
  • Thyme - 1 bunch
  • Parsley - 1 bunch
  • Fennel and anise seeds (you can do without them - but better with them :-) - crush 1 teaspoon in a mortar
  • Tomatoes - 2 large
  • Rice - better brown or red (if not, then just unpeeled - it has more fiber and vitamins)

Cooking (30 minutes):

If the rice is unpeeled or brown, then first boil it in salted water. Typically, the cooking time for this rice is 30 minutes. While it is cooking, you will prepare everything else. Cut the chicken into small slices (across) and fry until golden brown over high heat on olive oil in a deep frying pan. Remove the chicken from the pan and sauté the finely chopped onion, crushed garlic, and chopped spices (except parsley). Add chopped peppers. After 5 minutes, put chopped tomatoes, eggplant and parsley in the same place. Cover and simmer for another 5-7 minutes. Salt and pepper. 5 minutes before cooking, put the chicken to the vegetables, reduce the heat and let it simmer for another 5 minutes.

Serve rice separately, vegetables with chicken - separately.

Chicken can be replaced with beans or simply omitted herfrom a dish. It won't affect the taste in any way!

All! The dish is ready.

Pasta (penne) with spicy sausage and salad (for 4 people):

You will need:

For salad:

  • 350 grams penne (dry)
  • Spicy chorizo ​​sausages or others - like hunting sausages with the addition of paprika and chili (if there are none, then just hunting sausages, and when frying, add 1 tbsp paprika and increase the amount of chili in the recipe by 2 times) - ONLY 100 GRAMS of sausages!
  • Chili pepper - 1/2
  • Rosemary - 2 sprigs (can be replaced with dried)
  • Garlic - 4 cloves
  • 1 large egg or 2 small ones
  • 1/2 lemon
  • Olive oil
  • Natural yogurt or low-fat sour cream - 2 tbsp.
  • Cheese (as in salad) - finely grated - 30-40 grams

Preparation (30 minutes):

Salad: chop the whole lettuce and spinach with mint leaves and put in a bowl. Dry the nuts in a dry frying pan over medium heat for 5-7 minutes (do not forget to stir occasionally!). Peel the orange and cut into slices. Mix oil, vinegar, honey and salt and pepper in a small bowl. Refuel lettuce leaves dressing 5 minutes before serving, top with orange, cheese (as in the picture) and nuts.

Paste: Cook pasta in salted water according to package instructions. Grind chili and rosemary (leaves only). Cut the sausages into thin (0.5 cm) circles. Peel the garlic. In a deep frying pan, fry the chili, rosemary, sausages and squeezed garlic for 3-4 minutes. Pour out there ready-made pasta and about 100 ml. water left after boiling. Stir. Reduce the heat and leave for 2 minutes. In a separate bowl, mix juice of 1/2 lemon, egg, yogurt and grated cheese. Pour this sauce over pasta 1 minute before done. All!

The supper is ready!
Sausages can be removed from the recipe, but simply put finely chopped tomatoes and 1/2 tsp. ground pepper Chile. And you have a vegetarian dinner!

A couple of notes on recipes:

  1. Before you start cooking, read the recipe from beginning to end and try mentally imagine what and how you will do. This will help you make a plan of action and not rush to the recipe every 2 minutes - so the cooking process will go faster.
  2. Post ALL necessary products in front of on the table (if space permits). This will also save time.
  3. In my recipes, the amount of meat (poultry, fish) is APPROXIMATE. Adjust them for you.
  4. The size of the cut and the degree of salting- to your taste. The larger the cut vegetables, the longer the cooking time. Therefore, the cooking and frying times in my recipes are indicative.
  5. Always try the dish - maybe it's for YOUR taste, something is missing!
  6. It is desirable to observe the recipe of dressings and their proportionality. If you pour one and not add another, the result may not please.
