Today is such a warm day that after the heat of the oven, I opened the door to the kitchen, and I myself went out onto the terrace. Probably, I will not be mistaken if I dare to assume that every housewife has her own recipe for a “duty” pie. Some have a charlotte, others have a fruit tart, and I have a shortbread pie with apples. In late summer and early autumn, I also use plums and pears for the filling, but most often I cook this pie with apples.

Sandy pie with apples is soft, the dough does not fall apart, with light sand crumbs. Be sure to add apple filling lemon juice and zest, for a light citrus flavor.

This is just the case when incredibly tasty and fragrant pastries are obtained from simple and affordable ingredients.

With black tea or a cup fragrant coffee with milk, this shortbread apple pie is good in any company. Any apples are suitable for a pie - the main thing is that they are tasty!

Ingredients:

  • 120 gr. butter
  • 120 gr. sour cream
  • 2 eggs
  • 80 gr. Sahara
  • 400 gr. flour
  • 1 tsp baking powder

For filling:

  • 500 gr. apples (weight of unpeeled apples)
  • 1 lemon
  • 3 tbsp Sahara

How to make shortbread pie with apples:

In a large bowl, where we will knead the shortbread dough, pour half the flour (about 200 grams), and grate cold butter.

Grind the butter with flour with your hands to get uniform small crumbs. More flour can be added if needed. The colder the butter, the easier it will be to grind it with flour, so I often use the butter from the freezer. Then add baking powder.

In a separate bowl or plate, beat the eggs, add sour cream and sugar.

Beat everything with a mixer until the sugar is completely dissolved.

Pour the sour cream mixture into butter with flour.

Add the rest of the flour and mix thoroughly.

A larger ball (about 2/3 of the whole dough) will be the bottom and sides of our shortbread pie. The smaller ball is the top of the pie.

We cover the finished dough with a towel, or cling film, and put it in the refrigerator so that the butter in the dough does not begin to melt while we work on the filling.

Peel the apples for the filling and rub on coarse grater. In a bowl with grated apples, grate the lemon zest and squeeze the juice of half a lemon.

Grease the baking dish vegetable oil and sprinkle with flour. For the recipe, I used a 28 cm mold.

We take the dough out of the refrigerator, and roll out the larger ball with a rolling pin into a circle with a diameter of about 30 cm so that it fits into the mold. We shift the dough into a mold, and level the bottom and sides of our future pie.

We spread the apple filling on the dough.

Sprinkle apples with sugar.

Then roll out the remaining pastry to the diameter of the mold, and cover the pie. Carefully distribute the dough throughout the pie with your hands, you can cut off the excess with a knife, and add where there is not enough. The dough is very soft and elastic, so it is easy to handle it.

Now let's create the effect grated pie". We take a sharp fork, and “draw” a cell on the top of the pie first, then we stretch the grooves diagonally. As a result, we get very small crumbs on the test.
