Take 100 grams of dandelion leaves, 200 grams of young nettles, two cloves of garlic, green onions, four walnuts, two tablespoons of vegetable oil and cranberry juice for dressing, one tablespoon of pickled cabbage (sauerkraut).

How to prepare dandelion leaves for salad

Let's start with where to collect leaves or even dandelion flowers. Of course, away from roads, especially automobile ones. It is best to do this in the forest, in the clearings, or in your country house, if it is located far from the road.

Leaves are best taken young, which grow in the middle of the bush.

Dandelion leaves have a bitter taste. The older the leaves, the more bitterness in them. It is recommended to collect the leaves in the morning, then they are less bitter, and some do not even soak them. Although we collected in the morning, we still soaked it.

How to prepare the leaves and what to soak

The leaves have a slightly bitter taste, to remove bitterness from the leaves, it is necessary to fill them with salt or cold water. According to my personal remark, before flowering, the leaves are more tender and not so bitter.

First option. If you need to urgently prepare a salad, then soak for one hour in a saline solution. Take 1 tablespoon of ordinary salt per liter of water.

Second option. If there is time, then soak in plain water, soaking overnight.

We tried and fast option, and at night. It is best soaked when dandelion leaves stand overnight in water.

How to make dandelion and cucumber salad

  • Dandelion leaves - 50 gr.
  • Cucumber - 200 gr.
  • Green onions - 50 gr.
  • Sour cream - 100 gr.
  • Salt and black pepper to taste

Dandelion salad is not spontaneous, so we have already partially prepared it by soaking the leaves. Now my green onions and cucumbers. We take as much onions as dandelions, and twice as many cucumbers as onions and dandelions combined.

Now let's cut it all. Cut the dandelion leaves and green onion finely, about 5 mm. And cucumbers are straws, approximately the same size.

We will fill with ordinary sour cream. Our sour cream is thick, so it took a little more than 100 grams. We mix everything well. Now you can try the salad.

But for our taste, it is better to add salt and pepper, black ground pepper. We tried without pepper, but it tastes better with pepper.

The light taste of dandelion in the salad is heard, and it is well interrupted by pepper. With pepper, you can hardly say that there are dandelion leaves in the salad.

  • Nettle - 50 gr.

3. Cut the dandelion leaves (1 - 1.5 cm.)

4. Cut greens, onions and parsley.

5. Cut the radish into half rings.

6. The nettle has already cooled down, we cut it. We cut the nettle into 5 - 8 mm. and add to the salad.

7. Now we need salad dressing. You can season with olive oil, or you can make delicious dressing. To do this, mix 3 tbsp. spoons olive oil, 1 tbsp. spoon soy sauce, 1 tbsp. teaspoon lemon juice, salt and pepper to taste. Detail video The recipe will be at the end of the article.

I like this version of the salad the most, and what is very important, you should not store it. It is very tasty right after slicing and dressing. If you decide to try to make it earlier, then do not fill immediately, but immediately before eating.

  • 50 - 100 grams of dandelion leaves
  • 30 grams of green onions
  • 1 - 2 boiled eggs (you can use 3 - 4 quail eggs)

1. Soak dandelion leaves in salted or cold water, dry.

2. Chop the leaves with a knife.
