A hot liquid dish is an integral part of a person's daily diet. Slavic traditional cuisine rich in all kinds of recipes for first courses. One of the simple and affordable to prepare, but delicious to the point of unconsciousness, some rightfully consider the treat to be their favorite, is chicken soup with noodles. In just an hour you will get delicious, light dish, which will be equally relevant all year round.

The main secret in a chicken soup recipe delicious broth. For it, you can use any parts of the chicken carcass: it will turn out from the fillet, someone likes a wing or a drumstick in soup. Some people prefer a rich broth, others a light version of the soup base. Therefore, you can use any part of the bird you like, in my case it is the breast.

  • flour - 100 g;
  • egg - 1 pc.;
  • spices - salt, a mixture of peppers, bay leaf.

My chicken meat, pour cold water into a working pan and set to boil. We put one peeled carrot, onion (no need to cut them finely, we will pull them out later), bay leaf and peppercorns to the meat in a saucepan. Vegetables will give the broth a beautiful color and aroma.

We cut the potato tubers into cubes (the size you like), chop the carrots into strips, and perhaps use a large grater (again, it depends on your preferences), finely chop the onion.


We are making soup. We pass the bow. When it changes color, becomes transparent, pour the carrots into the pan.

When the meat is cooked, we take out the ingredients cooked with it, the onion, carrots and parsley stalks from the pan. And, of course, let's not forget about the chicken. Disassemble the breast, you can cut it into cubes, you can tear it into fibers. Then we return the chicken meat back to the broth, add the potatoes there.


When the potatoes are cooked, send (required in boiling water!) homemade noodles and vegetable roast. After 2-3 minutes, the noodles are cooked, it is cooked instantly. Now you can add chopped parsley and, after letting our soup boil for a minute, turn off the burner! Let the soup brew a little under a closed lid, just do not forget to get the bay leaf.

This soup with homemade noodles is perfect for hot summer days when you don’t want to eat anything heavy, but you can’t do without a normal full meal.

Required Ingredients:

Put the chicken broth to boil and start preparing the dough. Break three eggs into a deep bowl, after separating the yolks from the whites. Homemade noodles are made exclusively from yolks. The broth should be cooked by now. Remove the chicken (soup set, breast or legs) from the water and transfer to a plate so that the meat has cooled slightly. Season the broth with your favorite spices. For light soup with homemade noodles will do - it will give the dish a rich yellow color and will favorably affect the work of the stomach. Simple and inexpensive to prepare, it has become a lifesaver for the lower class Chinese, greatly improving their meager diet of rice, wheat, and soy.

There is an opinion that none other than Marco Polo, who arrived from China in 1292, brought noodles to Europe.

It is known that Italians are also crazy about noodles, and this love lasts for centuries. In the 16th century, noodles became one of the national Italian dishes. In Naples, there was a special way of cooking - they kneaded the dough with their feet so that it was as tight as possible, and then squeezed it with a press, on which as many as five people sat down. After that, the dough pancake was separated by special gratings, the type of which depended on which pasta would be cooked. So, there were several such lattices: "vermicelli", "lasagnette", "shells", "trenette", "fidelini", "farfalle".

Until the early 16th century, noodles were not the cheapest dessert in Italy. Only those close to the royal family and the "cream of society" could afford it. This was due to the use of a special kind of wheat "durum", which was valued more than all the others. In the 17th century, machines were invented to make noodles in a stream, which led to a decrease in the cost of the product and its rapid distribution.

An interesting fact is that if there were no noodles, we would hardly use forks now. Gennaro Spadacchini, close associate of King Ferdinand II, invented cutlery with several prongs to make it convenient for them to eat noodles.

In Russia, noodles, like most modern products, appeared during the reign of Peter the Great. Already at the end of the 18th century, the first Russian pasta factory was opened.

Homemade noodle soup recipe:

1. First, cook the poultry broth. Best to use domestic chicken or a turkey. To do this, pour the washed meat with cold water and bring to a boil, remove the foam, salt and cook the broth for 45 minutes - 1.5 hours over low heat. You can add a whole onion to the broth, which we remove at the end of the preparation of the broth.

2. While the broth is cooking, prepare homemade noodles. To do this, beat the egg with a pinch of salt and stir in 100 g of flour (you may need a little more or less flour), knead the dough well, which should turn out to be homogeneous and elastic. 3. Remove the meat from the prepared broth, cool and separate it from the bones, cut into pieces.

4. Peel potatoes, carrots and onions. Cut the potatoes into cubes, grate the carrots, cut the onion into small pieces. Onions and carrots can be fried for several minutes in a pan with vegetable oil, or put together with potatoes immediately into the broth /

As tempting as it is to learn how to cook gourmet restaurant dishes or try out a recipe from a famous chef, sometimes you want to cook something quite simple. Simple not in the sense of minimal time and effort, but in the sense of the simplicity of the composition and method of preparation. Minimalist recipe. But this is how, with a minimum set of products, traditional chicken noodles are prepared. This recipe is also good because all the products for it are only boiled and do not require any preliminary frying.

Ingredients:

  • Chicken carcass;
  • 1 carrot;
  • 1 bulb.
For noodles:
  • 1 cup wheat flour;
  • 1 egg;
  • Water to the desired dough consistency;
  • Salt.
Cooking:

For homemade noodles, soup chicken is best. Her meat is denser, it will take longer to cook, but the broth will turn out tastier, richer and more aromatic than broiler chicken broth. The ideal option in general there will be a domestic chicken or even a rooster. So, carefully wash the bird, remove the insides, if they were there, and, if necessary, singe the carcass. We place the chicken in a pan of a suitable size and fill it with cold water.

We put the pan on the fire and cook the broth over very low heat. For soup chicken or rooster, it will take about two hours, and broiler chicken should be cooked no longer than an hour. About half an hour before the broth is ready, put in it one whole (peeled and washed) carrot and a whole onion peeled from the husk. Cook the broth in a saucepan with an open lid.

While the broth is cooking, make the noodles. To do this, first knead the steep dough from flour, eggs and water. By the way, you can put more than one egg. So, pour the sifted flour into a bowl, mix it with salt (one or two pinches) and collect it in a pile. We make a recess in the flour slide, break the egg into it and begin to knead the dough, gradually adding warm water. Knead the dough properly. It should turn out cool, but plastic. Ready dough cover with a clean towel or cling film and leave for at least half an hour to proof. During this time, the gluten will swell, and the dough will become softer and more pliable.

After that, sprinkle the table with flour and roll out the dough into a thin layer. It remains to cut it with noodles. This can be done in several ways. If you have a special knife, then just use it. If it is not there, then the noodles can be cut with an ordinary knife, and to make the dough strips even, cut them along the ruler. To save time, you can divide the layer into several parts, sprinkle them with flour and fold them in a pile, and then start cutting strips of dough. Or you can roll the layer sprinkled with flour into a roll, and then cut it across the section. In any case, the dough strips should turn out to be very narrow - no wider than five millimeters. Leave the dough cut into noodles to dry for about half an hour.

We take out the chicken from the finished broth and divide it into portions or even separate the fillet from the bones. Put the pieces of chicken or the removed fillet back into the broth, and take out the carrots and onions from it - we will no longer need vegetables. We put the broth on the fire and let it boil. After that, season the soup with noodles and cook over medium heat until the noodles are soft. We put salt and spices at the end of cooking.

Homemade noodles with chicken giblets

Recipe for lovers chicken giblets. For this soup, you can use chicken hearts and stomachs. Better yet, take equal proportions of hearts, stomachs and liver.

Ingredients

  • Chicken offal - half a kilo;
  • Onion - 1 head;
  • Carrots - 1 piece;
  • Potatoes - 2 pieces;
  • Butter - 2 tablespoons;
  • Vegetable oil - 2 tablespoons.
For noodles:
  • Flour - 1 cup;
  • Egg - 1 piece;
  • Salt - half a teaspoon;

Cooking:

We make the noodles in advance, since this recipe does not provide for the preliminary preparation of the broth. So, knead the dough from a glass of flour, salt, eggs and water. We also add salt and spices to your liking, again wait for the broth to boil and put the noodles. Cook the soup for another five minutes and turn off the heat. We cover the pan with a lid and let our chicken noodles with giblets brew.


Chicken noodles with vermicelli

If you are looking for a very simple recipe chicken noodles then this is your option. Of course, calling this soup homemade chicken noodles would not be entirely correct, but as an express option, this recipe will do just fine.

Ingredients:

  • Chicken soup set - 1 kilogram;
  • Vermicelli - 2 handfuls;
  • Potatoes - 2 pieces;
  • Carrot - 1 piece;
  • Salt and spices.
Cooking:

From the chicken soup set, cook the usual broth. Depending on the quality of the components of this set, either we leave pieces of the carcass in the soup, or we separate the meat from the bones. We roll it out as thin as possible, and leave it on the table to dry for twenty-five minutes. Then we roll the dough into a roll, and cut it thinly with a sharp knife or pass it through a noodle cutter.

From the finished broth we take out the carrots and onions with a slotted spoon and discard. Then we take out the chicken, separate it from the bone, divide it into fibers and return it to the pan.

  • flour - 100-150 g;
  • purified water - 2.5 l;
  • salt - to taste;
  • spicy herbs - to taste;
  • allspice peas - 4-5 pcs.;

  • fresh parsley and dill - to taste.

Cooking

To prepare homemade noodles from eggs and flour, knead a stiff dough and roll it out on the table with a very thin layer. We let it dry a little, and cut it with a noodle cutter or, rolling the dough with a roll, chop it with a sharp knife.

We wash the chicken, cut it into pieces and put it in a multicooker container. We clean the onion and put it to the whole chicken or cut it in half, and cut the carrots and bell peppers into strips.
