Goroshnitsa or gorokhovitsa is a porridge made from dried peas that has long been one of the most popular Russian dishes. Today, they hardly remember about it, however, in terms of its nutritional value and the content of useful trace elements, it is in no way inferior to buckwheat, oatmeal, pearl barley. In addition, there is much more protein in it, since peas are not cereals, but legumes. But how to cook such a dish?

Initially, this dish was cooked in a Russian oven, but today they mainly use an oven for this. A slow cooker is also suitable, but you should immediately understand that it is not “Porridge” that is needed here, but another program that provides the contents of the bowl with slow languor - basically it is “Stew”, although some housewives use “Soup” and even “Multipovar”. For the latter, the temperature is set to 120-130 degrees so that the peas do not burn and bake.

The classic composition of peas is water or meat broth, peas, onions, salt, butter.

The basic version of this porridge, although hearty, is more often used simply as a side dish, since it seems empty to many. Therefore, the hostess' recipe is constantly being varied. One of the most popular "author's" options is peas with smoked meats - mostly sausages or smoked chicken legs. Add the meat component towards the end of the multicooker so that it is not too soft. And then they choose “Heating” and let the pea stand under the lid for about 20 minutes - so the peas will be saturated with the aromas of smoked meats.

In addition, there are several more options for peas in a slow cooker:

  • with bacon - almost an alternative to porridge with smoked meats, only the bacon must be fried first, but added to the peas also at the last stage;
  • with mushrooms - very satisfying and not too heavy, mushrooms can be taken not only fresh, but also salty, but fresh ones will have to be fried in advance;
  • with vegetables - in terms of calories it is the best option, since it is dietary, according to the degree of load on digestion, too, but the satiety of such a pea is lower than that of other options.

As for vegetables, literally everything can be added to the pea, except for eggplant: bell peppers, carrots, and tomatoes are well suited. And, of course, do not forget to add fresh herbs to it when serving, thanks to which the absorption of peas will be easier.

Rinse the soaked peas, put them in a multicooker bowl and pour in cold water so that it covers the peas by 2-3 centimeters. Turn on the "Soup" mode and cook until the end of the program. In my multicooker, this mode is 40 minutes.

Cook under the lid, periodically removing the foam with a slotted spoon.

At the end of the program, the peas should be well boiled. If he didn't absorb about most of the water, then the excess liquid can be drained, then add it little by little when you start to crush the peas so that the porridge does not turn out too thick.

Mash the boiled peas with a masher (or puree with a blender), salt and pepper to taste, then mix with the finished roast, which must first be warmed up a little.

Rinse the peas thoroughly in cool water several times to remove dust and excess starch. Do this until the water, which was once again filled with peas, is completely clean. You can do it differently - pour it into a colander and rinse under running water for 2-3 minutes, stirring constantly.

To make the peas boil better, put them in a bowl before cooking, pour in a little warm water and hold for at least 3 hours (ideally soak overnight).

Transfer clean peas to a multicooker bowl, pour water, add salt to your liking and mix.

On the control panel, set the “Porridge” mode (in some models of multicookers, the program is called “Rice, cereals”, you can cook in the “Soup” mode), set the timer for 1 hour and press “Start”. Periodically open the multicooker and remove the foam that collects on the surface with a slotted spoon. Cook with the lid closed until you hear a beep about the end of the program.

During this time, peel and peel the onions and carrots, wash them. Cut the onions into cubes, carrots into strips.

Prepare immediately and sausages, cutting them at your discretion into strips, circles (half circles) or large cubes.

By the end of the program, the peas should be well boiled. If there is a little water left, then drain it into a separate bowl, you may still need it. Using a kitchen masher or blender, mash the peas to a puree. If necessary (if the puree is too thick), add the remaining water from cooking.

In a frying pan with hot vegetable oil fry prepared vegetables with sausages.

Transfer the resulting roast to the peas, mix, add salt if necessary, add black ground pepper to taste.

Serve the finished dish to the table hot, sprinkled with finely chopped dill on top, with sliced fresh vegetables(cucumber, tomato, bell pepper).
