Ingredients

  • puff pastry yeast, sheet - 2 layers (450-500 g);
  • chocolate (preferably dark) - 2 bars of 100 g each;
  • egg - 1 pc.,
  • peanuts (optional) - a handful,
  • flour or starch - for dusting.

Cooking

First, defrost the dough. As a rule, the package contains 2 almost square layers of dough - we take out both, put them on a work surface, lightly sprinkled with flour or starch, be sure to cover them from above so that the dough does not dry out. If the room is warm, after 15 minutes you can already work on the dough - it has defrosted.
We take one of the layers, roll it out a little thinner. It is better to calculate the size of the rolled out layer by the size of the chocolate bar that will be in the filling. The width of the layer should be 2.5-3 times larger than the tile, the height should be 3-5 cm more. As soon as you start molding the pies, you can immediately turn on the oven to warm up.

Put a bar of chocolate in the middle of the layer.

Then we arm ourselves with a knife and on both sides of the tile, starting from the top, we make oblique cuts. The width of the stripes is not particularly important, it can be adjusted at your discretion. We remove the corner parts of the dough from above and below - without them it will be easier to form a neat cake.

Lubricate the resulting strips by about 2/3 of the length with a beaten egg - it will help fix the strips during baking so that nothing spreads anywhere. Now we hide the chocolate in puff pastry: first we cover the top with a rectangular piece of dough, then alternately, bending the strips over each other. We also hide the lower rectangle of the dough under the stripes.

As a result, you should end up with a rectangular-shaped chocolate cake with a pigtail pattern on top. Similarly, we form the second cake, after which we grease both tops with an egg.

Already in this form, pies, in general, are ready for baking. But to make them even tastier and prettier, you can sprinkle the tops with crushed nuts or any other topping: sesame seeds, poppy seeds, coke chips, etc.

We put the pies on a baking sheet, slightly moistened with water or lined with parchment, and bake in a preheated oven at 190-200 degrees for about 25-30 minutes. (but it is better to focus on the degree of browning of the tops).

Cut and serve ready pie With chocolate bar you can wait until it cools down, or immediately. The chocolate melted while baking, but not enough to run out. The only point is that the layers of hot puff pastry stick together a little when cut and the layered structure of the pie is not so clearly visible.

How to make chocolate puffs

In order for the dough to roll out well, you need to take the puff pastry out of the freezer, take it out of the package, separate the layers, if there are 2 of them in the package, like mine, and leave to defrost on a cutting board for about twenty minutes. When the dough is defrosted, you need to turn on the oven for heating, setting the temperature to 200 degrees.

Then you need to slightly roll out the dough in one direction. This is important, puff pastry is always rolled out in only one direction. The rolled out layer of dough must have a thickness of at least 2 mm. Too thinly rolled puff pastry does not rise well and breaks during baking.

After that, you need to divide the rolled out layer of dough into four equal parts.

Place chocolate filling on one side. I have icing in granules. You can also just break a bar of dark chocolate into large pieces.

Fold the dough in half, cover the filling and pinch the edges.

Do the same with the second layer of dough. In this case, I decided to use granules of white chocolate icing as a filling.

Line a large baking sheet with a silicone mat, do not grease it with anything, nothing sticks to silicone. Lay the puffs on a baking sheet at some distance from each other. Keep in mind that when baking puffs increase significantly in volume, however, they mostly grow up. But, if the puffs are in contact during baking, then when you separate them from each other, chocolate filling will flow out of them.

Leave the puffs for 20 minutes directly on the "proofing" (culinary term) pan. During this time, the dough will finally melt, soften and rise a little. This is an important point. If you rush to put the puffs in the oven right away, they will not be as fluffy as you would like.

Now you can put the puffs baked in the oven for 20 minutes. When baking, the puffs should double in height and a little in the perimeter.

After the puffs have cooled, they can even be cut, the chocolate will no longer leak out, since it has a very low melting point (about 37 degrees).   • Chocolate paste (cream) - 300 gr.;
  • Cinnamon - 1 tsp

  1. Roll out the dough into a rectangle;
  2. Soak raisins and nuts in warm water for about 15 minutes;
  3. Grind the nuts with a knife or blender;
  4. Chop the chocolate with a knife. It can melt in a blender;
  5. Combine raisins, nuts, chocolate and cinnamon in a bowl. Mix;
  6. Spread the filling evenly on top of the dough;
  7. Roll the dough into a roll and cut it into small pieces with a very sharp knife. Be careful, because of the heterogeneity, the filling may crumble;
  8. Arrange the pieces on a baking sheet lined with baking paper;
  9. Cook the rolls in the oven for 20 minutes at a temperature of 200 degrees.

Secret: If the pastries are sprinkled with cold water before being sent to the oven, they will turn out to be more ruddy and crispy.
