This year, the weather does not please us, so today I bake pies on summer days. The dough recipe is very simple, prepared in two counts, suitable for both fried and baked pies.

Here are some of my pie recipes:
- puff pastry pies with sausage and kefir
- snack pies with potatoes
- pies on kefir

In a glass of warm boiled water, dissolve sugar and salt, then beat there egg. Stir with a whisk, then dissolve fresh yeast and set aside for 10 minutes

Then add sunflower oil


Sift the wheat flour in parts, mix thoroughly with a whisk each time, as long as possible


Flour may need more or vice versa less, it all depends on its quality. It took me 4 cups of flour.
Knead soft and elastic dough. It is obedient, does not stick to hands


We cover with a towel so that it does not become weathered, we remove it for a while to the side. The dough rises very well, literally in a matter of minutes


In the meantime, let's do the stuffing. You can fill any filling your heart desires. Today I have: boiled rice, canned pink salmon, fried onion in sunflower oil, plus fresh dill. Stir, salt and pepper to taste, the filling is ready.


Divide the dough into balls, roll out, spread the filling in the center and pinch the edges. Lay out on an oiled baking sheet. Cover with a towel on top and leave for 5-10 minutes to come up, increase noticeably in volume. In the meantime, turn on the oven so that it has time to heat up. Before being sent to the oven, the pies were smeared with milk.

Let's make delicious rice cakes and canned fish, the aroma and taste of which are simply crazy! The recipe for these pies is quite simple and relatively cheap. But at the same time, the pies are very tasty, especially when piping hot.

Everyone, without exception, probably loves pies, but when it comes to choosing the filling, everyone has their own preferences. Someone likes meat, some mushrooms or vegetables, many choose sweet fillings with fruits or jam, but I want to tell you how to cook pies with rice and fish. In our family, this is the most favorite option, which is why we cook them most often and in large quantities. For example, in this list, the ingredients are designed for about 30 small pies, so you have to call big company to eat them all. Anyway, with this recipe for making pies with rice and fish, it will not be difficult for you to make hearty lunch or dinner for you and your friends, trust me.

For the test we need:
0.5 liters of warm boiled water (milk or whey),
1 dining room a spoonful of sugar,
1 teaspoon salt
4 tablespoons vegetable oil (melted margarine, butter, or fat)
1 sachet of fast acting yeast (10-11 grams)
5-6 cups sifted wheat flour
Optionally, you can add 2-3 eggs.

For filling:
1 jar (245 grams) of canned pink salmon natural (you can replace pink salmon with absolutely any canned fish according to your taste),
1 medium onion
200 grams of rice, vegetable or butter (fat) for frying onions.

For frying pies: vegetable oil or fat.

Please note that according to this recipe, approximately 30 pies are obtained (although not very large). Therefore, if you do not have a very large family, or you are not expecting guests, reduce the amount of all products by the same amount.

Let's start by preparing the dough. Pour warm boiled water into the bowl in which we will knead, and in which the dough will be nurtured in the future (this can be a large bowl, as in my case, or maybe a saucepan with a lid - which is more preferable) pour warm boiled water (dough for fried pies, especially not with sweet stuffing, I always make it with water, not with milk, with vegetable oil and without eggs) and add instant yeast to the water.


Then add salt, sugar and vegetable oil there.


Add a couple cups of flour and mix well.


In the resulting batter Gradually add flour and knead the dough with your hands. Add enough flour to make the dough thick enough, almost like dumplings dough. Cover the dough with a towel better lid, and put it in a warm place to nurse. It’s not worth heating it too zealously, so as not to weld it, and while we are doing the filling, the dough will have time to come out anyway.


Boil rice until fully cooked.

and fry it in a small amount of oil or fat.


Drain the juice or oil from canned food, knead the fish with a fork. Add fish and onion to rice


mix, add salt if necessary, pepper if desired.


Everything, the filling is ready. As soon as the dough rises (i.e. approximately doubles in volume),


we crush it, i.e. knead again


and again put in a warm place. As soon as the dough rises for the second time,


we grease our hands vegetable oil or fat and begin to cut the dough. We tear off or cut off small pieces from the dough and roll out small balls from them (in rolled form, the diameter of the balls should be about 4 cm). We put the balls on a baking sheet or table, previously greased with oil or fat. In general, if we are going to fry the dough, and not bake it, we should not use flour when cutting the dough. That is, both the hands, and the rolling pin, and the surfaces on which we will roll out the dough, and on which we will lay the pies, must be greased with oil, and not sprinkled with flour. The fact is that when frying, the flour begins to burn slightly, the oil in the pan begins to smoke and ceases to be transparent, and a black coating may form on the surface of the pies. After all the dough is rolled into balls, let the dough stand for 10-15 minutes. After that, we start with the balls that were rolled first. We roll each ball with a rolling pin into a cake, in the middle of which we put about a tablespoon of the filling.


We blind the edges of the circle.


Then, at the place where the edges are fastened, we pass a second time, while bending the corners inward and more carefully fastening the dough so that when frying, the pies do not fall apart.


Lay the finished pies seam side down on a pre-greased baking sheet. As soon as all the pies are ready, pour a sufficiently large amount of oil or fat into a frying pan with high sides (the oil should cover the pies by more than half the thickness). Put the pan on medium fire(You should never fry the pies at the highest temperature - the outside of the pies will start to burn, but the inside will not have time to fry). As soon as the oil heats up well - this can be checked by throwing a small piece of dough into the pan, carefully place the pies in the pan so that there is free space between them. As soon as the pies begin to fry from the bottom,


turn the pies over (it is very convenient to do this with two wooden spatulas),


and let it cook on the other side. After that, remove the pies from the pan. You can remove excess oil on a paper towel. And without letting the pies cool down, serve them to the table.

And there they, hot ones, can be eaten with tea, and with coffee, and with milk, and with compote - in short, as you like.

During fasting, many deny themselves almost everything. But you can cook a pie that will saturate to the very eyeballs, and will not go against the generally accepted rule.

There is nothing illegal about this fish pie. That is why it is called lean.

For this cake I needed these products:

First, I washed the rice and soaked it for an hour.


Then I started testing. In a large bowl, she poured water heated to body temperature and poured yeast.


When they blossomed, I poured sunflower oil here and put salt.


Mix the liquid well and pour in 3 cups of flour.


Kneaded a sticky dough.


I covered it with a lid and put it in a warm place to rise.

And while it was rising, she began to fill. Chopped the onion. I had small onions (by the way, that's why there are more of them than indicated in the recipe), so I cut them into half rings. But you can cut it even smaller.


Fry the onion in oil until light yellow.


She poured more water into the pan, salted it and threw in the rice. Cooked for 15 minutes at a medium boil. She put it in a colander and rinsed it with cold water.


An hour later, the dough came up like this.


I poured a glass of flour on the table, raked it to the sides and put the dough in the middle.


Knead it properly, taking a little flour from the sides. It took me about half a cup. The dough turned out very soft, but did not stick to the hands due to sunflower oil which is in it.


I put the dough back in the bowl and again put it in a warm place to rise. That's how it rose for the second time.


I laid it out on the table, a little dusted with flour. Divided into two parts: one made a little smaller.

I rolled out most of the dough into juicy according to the size of the baking sheet and laid it on a baking sheet, which I greased well with oil.


Spread the rice in an even layer on top of the dough.


She opened the jars of sardines and put the fish on a plate.
She removed the bones from the pieces of fish, and laid out the pulp in one layer on rice. Placed bay leaves on top.


The fish was covered with onions.


I rolled out the second part of the dough on the table into another layer and transferred it to the pie with a rolling pin.

Since you can’t eat eggs during fasting, and the cake needs to be smeared with something, I poured a little tea leaves into a cup and added half a teaspoon of sunflower oil to it.

Stirred. I smeared the cake with this liquid and put it in an oven preheated to 200 °. Bake for 50 minutes until the crust has acquired a beautiful yellowish color.


A freshly baked pie has a hard top crust. So I immediately covered it with a clean towel and sprinkled it with cold water. Left it for 20 minutes.

During this time, the crust has softened, and the cake has cooled down a bit. Then I cut it into pieces.

It turned out to be very tasty: the filling is fragrant and juicy, the dough is very soft, and the crust is slightly crumbly.

If your rice is cooked and has had time to cool, then during this time you can have time to cook the filling. Drain liquid from canned fish, mash with a fork and put on rice. To make the filling for the pie more juicy, you can add a little liquid from canned food to the mixture of canned food and rice (but do not add too much liquid so that the filling does not turn out liquid).

When the yeast is frothy, add salt to it and olive oil, mix.

Then add 300-320 grams of flour to the mixture of yeast and butter and mix with a spatula.

Then knead the dough with your hands, adding the remaining flour. The dough will be pliable and very soft.

Divide the dough into 2/3 and 1/3. Lubricate the baking dish with vegetable oil, lay out most of the dough, spread it with your hands over the form, forming the sides. Prick the bottom with a fork. Pour over the filling and spread evenly.
From the smaller part, roll out the cake along the diameter of the mold, cover the filling and fix the dough around the circumference, fastening the lower and upper cakes. Brush the top of the pie with beaten egg, prick with a fork to release steam and, if desired, sprinkle with herbes de Provence.

Bake a pie with rice and canned fish for 35-40 minutes (until the desired golden brown) in an oven preheated to 180 degrees.

  1. First, take the rice, wash it well. Then the rice is sent to cook. We need rice to turn out crumbly, how to do this, probably, every housewife has her own way. For example, add a little vegetable oil to the water when cooking or just buy special rice. Everyone has their own approach to cooking. Therefore, we continue.
  2. While the rice is cooking, we can work on one more ingredient for the filling. We take the prepared onion, chop it and send it to the pan. Saute well until the onion turns golden. Many housewives use canned onions, it also turns out quite interesting.
  3. Now we take canned food so that we get delicious puff pastry with fish, thoroughly knead the contents of the canned food, turning it into a homogeneous mass.
  4. Add the fish mass to the already cooked rice, mix well and set aside, our filling is ready.
  5. Now let's take a test. We take a container convenient for cooking, a deep bowl. We send the yeast into a container and fill it with water, you will need about half a glass of water. We take warm water. Next, add 1 teaspoon of sugar and 1 tablespoon of flour. Mix all the resulting mass. We wait about 15 minutes and a kind of hat should turn out over our yeast mass, which experienced housewives called steam. In this dough, we pour the sugar that we have left and salt.
  6. We drive the eggs into a separate bowl and shake, after that we can safely add them to the rest of the ingredients. Butter before use, we take it out of the refrigerator so that it thaws, then soften it and add it to the general container.
  7. Sift the flour to make the dough more fluffy. We pour out the flour at the final stage and begin to knead the dough, we do it carefully, without sparing kneading all the sides. If your dough turned out to be sticky enough, then we did everything right with you. We cover it with a towel and leave it to rest and grow up for about an hour. During this time, it should rise significantly and more than double.
  8. Next, we proceed to the formation of the pies themselves, for this we tear off small pieces of approximately the same size from the dough. Sprinkle the working surface with flour, we can also grease our hands with vegetable oil, as the dough is sticky and will stick to our hands.
  9. Roll out the prepared pieces of dough. After that, we return to the filling, put it on our future pies. We connect the edges with a beautiful seam.
  10. We spread the resulting pies on a baking sheet with the seam down so that they turn out beautiful. Do not forget to grease the baking sheet with oil, or if you have baking paper, you can use it. Some have a question, why is sour cream on the list of ingredients, the answer is simple. We coat the pies laid on a baking sheet with sour cream.
  11. We preheat the oven to about 200 degrees and send our efforts into it in the form of pies. We have about 20 minutes to wait, this is the time the pies will be baked in the oven. During this period, they will become ruddy and very appetizing.

We put them on a dish and we can invite the whole family to the table, our fish pies are ready. Having tried it, you will definitely appreciate all the taste delights, because these are not easy rice pies, the use of fish in the recipe gives its piquancy and zest.
