Better cook them fermented milk products- kefir, sour milk or sour cream. If you like moist muffins, then add soft cheese to the filling and cut it into pieces - this will add juiciness to the pastries. With grated cheese, the muffins will turn out soft, tender, but the dough will be a little denser and more uniform.

    Beat the egg with a fork and pour into warm kefir (room temperature).

    Add melted butter to it.

    Sift the flour, pour into the kefir mixture. Don't forget to add baking powder (it can be mixed with flour).

    Stir the dough. While it has not yet become homogeneous and dense, add spices and spices to it to your liking. Knead the dough until all ingredients are combined.

    Grate cheese or cut into pieces.

    Cut the ham into very small cubes. If you cut it large, it will be difficult for the dough to rise, and the muffins will turn out dense.

    Mix cheese and ham with dough.

    The dough will be denser than for sweet muffins, it will fall off the spoon in a lump, and not pour out.

    Forms fill not 2/3, not more. The muffins will rise in the oven. Since the dough is dense and not quite homogeneous, press it down a little to better distribute it throughout the pan.

    Brush the top with beaten egg and sprinkle with sesame seeds.

    Muffins are baked in a well-heated oven at a temperature of 180-190 degrees. They will be ready in 20-25 minutes. To prevent the muffins from getting soggy, immediately remove them from the molds and cool on a wire rack.

What do you think of the snack muffins idea? Do you like this kind of food? Until recently, I was very critical of muffins - they seemed boring and very primitive in taste to me, but now, during the marathon, which I am running on the basis of our Facebook page, I kind of tasted them and even fell in love. It turns out that such pastries can be interesting, bright, unusual and very appetizing! Moreover, it can be very, very diverse - let’s say: a week ago I didn’t even think that it might occur to me to bake such a thing, and today I’m already thinking how to diversify it - whether to add smoked cheese? or broccoli? maybe olives? or pepperoni? or some chilli? Moreover, the ham and cheese muffins turned out so delicious that my husband, my indifferent to food husband, for whom the most ordinary sandwich is the ultimate dream, asked me to "repeat this recipe sometime." Here it is, my personal culinary Olympus!

Have you ever thought about why some cheeses melt perfectly, while others give only a hint of melting? When the cheese ripens, there is quite a lot of dicalcium paracasein in its composition - it holds back the rest of the ingredients and does not allow the cheese to melt. Over time and with the accumulation of lactic acid, dicalcium paracasein breaks down and gives way to monocalcium paracasein - but it is responsible for the fact that when heated, the cheese stretches and melts beautifully into threads.

Muffins with ham and cheese They also turned out to be a convenient snack for school: The eldest has recently stopped being fed breakfast in the dining room, so now I have to invent every day in order to give her something like that with me. These snack pieces turned out to be a real lifesaver: they are convenient (in transportation - that’s for sure: they don’t break, don’t spread, don’t smear all textbooks with oil), they are easy to eat (and then you don’t have to wash your hands from smoked sausage), well, and they are delicious (there are few children who refuse ham, and even in the form of muffins). In general, the pros - the sea, no cons. So - try it!

Ingredients:

1/2 tsp soda;

1/2 tsp salt;

300 g flour;

50 g of hard cheese;

150 g of ham;

250 g sour cream;

60 g melted butter.

We measure required amount flour. You can and should sift if you doubt the quality. If the flour is proven and good, there is no point in playing with a sieve. We also add salt and soda there - this is the dry part of the muffins. If you want to add your favorite dry herbs or seasonings to the dough, you can do it now.

We mix flour, soda, salt - carefully and with inspiration: given that the dough for muffins must be prepared quickly and without diligence, you have only one chance to carefully distribute salt and soda over pastries, and that chance is right now.

We cut the ham into beautiful cubes.

Grind the cheese in the same pieces as the ham.

Add the diced ham and diced cheese to the flour mixture. We mix.

We take another bowl-saucepan, melt the butter.

Add sour cream (I have quite thick homemade).

We beat the egg. We mix.

We combine the liquid and dry parts, quickly mix with a fork.

We spread the dough into molds (fill 2/3 of the volume).

Bake at 200 degrees for about 20 minutes.

Delicious both warm and cold.

Enjoy your meal!

Ham and cheese snack muffins will serve as a wonderful addition to first courses or an appetizer or snack. They are convenient to take with you and satisfy your hunger outside the home. They should be stored in the refrigerator in a bag or container, since the meat (ham) in their composition requires cold storage. But they can withstand several hours at an average temperature.

This ham and cheese muffin recipe calls for enough ingredients to make exactly 6 muffins. If you want to make a double serving, feel free to double all the ingredients.

In general, I advise you to cook such snack pastries for sure. Moreover, making muffins with ham and cheese is as easy as shelling pears. It took me no more than 5 minutes to knead the dough, and 25 minutes to bake.

Cooking time: 30 minutes

The number of servings - 6 pcs.

Ingredients:

  • 1 egg
  • 25 g butter + some more
  • 75 ml milk
  • 125 g flour
  • 0.5 tsp baking powder
  • 0.4 tsp salt
  • 100 g ham
  • 70 g hard cheese
  • 2-3 sprigs of parsley

Snack muffins with ham and cheese, step by step recipe

For some reason, it is always customary to start preparing muffins by mixing all liquid ingredients, so we turn on the oven to heat up (we need a temperature of 180 degrees) and send 75 ml of milk, one egg and 25 g of soft butter into a deep container. We also send a quarter teaspoon of salt there. Roughly stir the liquid ingredients with a fork.

Now let's prepare what snack bars will make from ordinary muffins. 100 g of ham cut into small cubes. 70 g of any hard cheese rub on coarse grater and finely chop the washed parsley.

Add ham, cheese, parsley to a container with liquid ingredients for muffin dough. Then add 125 g of flour and half a teaspoon of baking powder for dough.

Stir the dough for snack muffins with a fork until more or less homogeneous (no need to try hard).

I ran out of paper muffin liners, so I had to grease the dough containers with a little butter and sprinkle with flour (this method of preventing the dough from sticking to the mold is called “French shirt”).

Divide batter between six muffin tins. Put the dough on with a spoon.

By this time, the oven is already hot. desired temperature(at least mine), so we send the muffins to bake. Bake time - 25 minutes or until muffins are lightly golden.

I liked the photos of the finished ham and cheese muffins so much that I can’t stop with the amount of them needed for the recipe and show you even more interesting angles. These muffins turned out to be very appetizing, in my opinion.

Well, the recipe is outlined, the plate with muffins on the table is half empty :)

Sometimes you want to surprise your loved ones with an unusual breakfast, the preparation of which will take a minimum of time. Cheese muffins with ham and egg can be such an unusual dish.

Muffins are very fragrant, tender and quite satisfying. They can be served for breakfast with a cup of tea or used as a snack during the day.

Let's prepare necessary products for muffins.

Cooking dough. In a container we combine cheese, grated on a fine grater, yogurt (without additives) or kefir, dried garlic, sugar, pepper and salt. Pour in vegetable oil and mix well.

Add sifted flour and baking powder. Mix thoroughly.

The dough turns out to be quite thick, slightly thicker in consistency than for pancakes.

Add finely chopped ham and greens, mix. The dough is ready.

I will bake muffins silicone molds. Bottom diameter - 3.5 cm, top diameter - 7 cm, height - 5 cm.

Put 1 heaping tablespoon of dough into each mold. Using a teaspoon, spread the dough on the sides of the mold, making a recess in the center for the egg.

Break the egg into a small bowl.

We use medium-sized eggs, weighing 40-45 g, so that they fit in the recess. If the egg is large, you can remove some of the protein.

Carefully pour the egg, being careful not to damage the yolk, into the cavity. Thus, we fill the remaining molds with eggs.

On top of the eggs, carefully spread the remaining dough. If not all the tops of the eggs are completely covered with dough, this is not a problem.

Place the muffin cups in the preheated oven. We bake at a temperature of 210 degrees for about 15-20 minutes.

Ready cheese muffins with ham and egg cool a little, then serve.
