  1. Dried fruits should be washed, and then soaked in boiling water, then drained, put the dried apricots on paper towels, and dry.
  2. In a deep bowl, mix semolina with sour cream, leave the food for 20 minutes so that the cereal swells somewhat.
  3. Cut dry fruits into small pieces.
  4. Beat sugar with eggs in a separate bowl (whites from yolks do not need to be separated here).
  5. Fill the swollen semolina with the resulting mixture, add cottage cheese, mix or beat with a blender. If you beat the mass with a household appliance, the casserole will turn out to be softer, lighter in structure, airy.

Let me remind you that the glycemic index reflects the effect of foods on changes in blood sugar levels after eating them. So, GI under 40 is low.

With prunes, I also make this casserole, but I get bored with this taste faster. And with dried apricots - no. In addition, with it, the casserole acquires a beautiful golden-amber color :)

So, you will need the following ingredients:

    1 cup dried apricots

    0.5 teaspoon salt

    mold lubricating oil

I note in particular that there is not a single gram of sugar and flour in the composition.

Cooking:

Rinse the dried apricots well. If dry - steam or pour boiling water for 15 minutes. Finely chop.

Add the egg, semolina and salt to it.

Add cottage cheese. Fat content - optional. This time I have 18%. If desired, you can take completely fat-free. The casserole does not suffer from this - checked! If the cottage cheese is good, homogeneous, without lumps, you can not wipe it through a sieve.

Since the ingredients are launched all together, it is important to mix the mass thoroughly until completely homogeneous.

Lubricate the bottom and sides of the form with vegetable or butter. Put the resulting mass into it, evenly distribute.

My form is small - rectangular, 18 x 25 cm. The casserole turns out to be low, it bakes well.

Top with low-fat sour cream (I have 20%). If there is no sour cream, it does not matter, it will be delicious without it :)

Put the mold in a preheated oven, bake for about 40 minutes at a temperature of 180 degrees. Be careful not to burn the top. Ready casserole put on a board or dish.
