The shortcrust pastry for this pie is as simple as possible and does not require a large amount of ingredients. And for the filling you can use any jam, the main thing is that it is not too liquid. The result is a delicious and aromatic pie, probably familiar to many from childhood.

Only homemade baked goods can be delicious. What to do if you have very little time to prepare, but you want to get together with the whole family over a cup of tea and a slice of fragrant pie? We advise you to prepare grated pie with jam according to the traditional “Soviet” recipe.

Classic recipe for grated pie

Grated pie according to the classic recipe is prepared quickly and easily. In about an hour it is ready and you can sit down and drink tea. In order to prepare it you will need products for the dough and apples for the filling. Instead of apples, you can take pears or any other fruit, but then you need to add sugar depending on their sweetness.

For the test you need:

  • a full glass of flour;
  • half a glass of semolina;
  • 100g butter;
  • ¾ cup granulated sugar;
  • a pinch of salt;
  • 2 tsp baking powder.

For filling:

  • 4 large apples.

Preparation:

  1. In order to prepare the dough, you need to mix softened butter and granulated sugar. You don’t need to grind it for a long time, just mix until smooth.
  2. You need to add semolina to this mixture and mix everything well.
  3. In a separate container, mix flour and baking powder. Flour should always be sifted immediately before cooking. Firstly, it may contain unwanted impurities. Secondly, during sifting, the flour is saturated with oxygen and the products made from it are more fluffy.
  4. Flour and baking powder should be added to the creamy semolina mixture.
  5. Grind everything with your hands or a spoon until grains appear.
  6. Next you need to prepare the filling. To do this, apples should be grated on a coarse grater and placed on a sieve to drain excess liquid. It is advisable to take unsweetened apples for the filling.
  7. The dough must be divided into 3 parts. Between the 3 layers there will be 2 layers of filling.
  8. First, a third of the total volume of dough is placed in a mold greased with oil and sprinkled with breadcrumbs. Then put half of the filling on it. Then alternate again, the last will be the dough.

The peculiarity of the grated pie is that the ingredients for the dough are not kneaded, but mashed. Thanks to this, an interesting surface structure and fast cooking appeared.

Bake the pie, depending on the size and features of the oven, for about half an hour. You need to focus not on the recipe, but on the condition of the baking. From time to time it can be pierced with a dry match or a special stick to determine readiness. The oven temperature must be at least 180 ° C.

Shortcrust pastry pie

Grated shortcrust pastry pie is prepared based on the classic recipe, only margarine is added instead of butter. This does not in any way affect the final taste of the product. Rather, margarine is more suitable for preparing fluffy and rosy baked goods. This pie tastes best in the oven. You can also bake it in a slow cooker, first putting in long strips of paper to make it easier to remove.

For the test you need:

  • 2.5 cups flour;
  • 100g margarine for baking;
  • 50 g fat sour cream;
  • 1/3 cup granulated sugar;
  • 2 yolks;
  • 2 tsp baking powder.

For filling:

  • 700 g plums;
  • 1/3 cup granulated sugar;
  • teaspoon starch.

Preparation:

  1. Cut the plum in half and remove the pits. Sprinkle the halves with sugar. While the juice is being released, you can prepare the dough.
  2. After 30 minutes, drain the juice from the plums. They shouldn't be too juicy for the pie.
  3. In one large bowl, mix sugar, sour cream and softened margarine.
  4. Mix sifted flour and baking powder.
  5. Mix all the ingredients, knead the dough, divide it into 2 parts and freeze for 30 minutes.
  6. Place baking paper on a baking sheet. Grate 1 half of the shortcrust pastry using a regular coarse grater, distributing evenly over the baking sheet.
  7. Place plum halves on it in even rows, sprinkle them with starch on top so that the juice does not leak out.
  8. Place the rest of the grated dough on the plums.
  9. Bake the pie at a temperature of 170-180 ° C until cooked. Depending on the thickness of the pie, it takes from 25 to 40 minutes to cook.

The combination of shortcrust pastry and fruit always turns out well. But before cooking, be sure to try the filling. If plums or apples are sweet, then the amount of sugar should be reduced.

Lenten recipe without eggs

Lenten shortbread pie is made from margarine, flour, and sugar. To prepare it you don't need any milk or eggs. You can use any berries, jam, marmalade or preserves as a filling.

For the test you need:

  • 1.5 cups flour;
  • a pack of margarine;
  • 1/3 cup granulated sugar;
  • 1.5 tsp. baking powder.

For filling:

  • a glass of any jam;
  • 100 g of any nuts.

Preparation:

  1. Freeze the margarine so you can grate it.
  2. Roast nuts for topping. This way they will taste better. Chop the cooled nuts with a knife.
  3. In a large bowl, whisk together flour, baking powder and granulated sugar.
  4. To make the dough, grate the margarine on a coarse grater directly into the flour mixture.
  5. Mix it gently with a spoon or your hands until the dough forms crumbs. If there is not enough flour, add more.
  6. Preheat the oven.
  7. Place half of the mixture into the mold (or 1/3, depending on the diameter of the mold).
  8. Place the jam on the dough and sprinkle it with chopped nuts. If the mold is small, then repeat the dough-filling layers again.
  9. Sprinkle crumbs on top of the pie and bake at 180°C for 30-35 minutes.

Filling with strawberry jam

There is nothing tastier than fragrant strawberry jam spread on a soft loaf! Just grated pie with strawberry jam. The tender dough complements the berries boiled in syrup. It seems that they are cooked in the summer only to be put into the filling in the winter.

For the test you need:

  • 2 cups of flour;
  • 100 g butter;
  • 2-3 tbsp. sour cream;
  • 1/4 cup granulated sugar;
  • 2 yolks;
  • a pinch of salt;
  • 1.5 tsp. baking powder.

For filling:

  • a glass of strawberry jam;
  • 1 tablespoon starch.

Preparation:

  1. Sift flour, mix with baking powder.
  2. Mix the yolks with sugar, sour cream, and salt.
  3. Mix flour, egg mixture and softened butter and divide into 2 unequal parts. The smaller one will be used as a sprinkle on top; it needs to be frozen. Wrap most of it in film and put it in the refrigerator for half an hour.
  4. After 30 minutes, roll out the larger part and put the filling on it.
  5. For the filling, mix the jam with starch (so that the filling does not leak out).
  6. Frozen dough should be grated on top using a coarse grater. The pie will turn out not only tasty, but also beautiful.
  7. Place in the oven at a temperature of 170-180 O C. After half an hour, remove and check for readiness. If the pie is not baked, then put it in the oven for another 5-10 minutes.

Delicious quick pie

This quick shredded pie recipe uses very simple ingredients. One can be replaced by another. If there are no eggs in the refrigerator, you can do without them. Part of the butter or margarine is replaced with sour cream or kefir. With the latter, the main thing is not to overdo it, so that the batter does not come out.


The filling for the quick version can be anything. You need to take what is in the refrigerator at the moment. It can be:

  • chocolate;
  • nuts;
  • jam;
  • fruits;
  • cottage cheese;
  • frozen berries.

We will need:

Flour - 3 cups flour;
Baking powder - 1 pack;
Margarine - 200 grams
Sugar - 100 grams;
Egg - 1 pc;
Lemon - 1 piece;
Salt - to taste;
Soda - a pinch;

Before starting cooking, you must turn on the oven - it should be preheated to 170-180 degrees. The margarine should be well chilled; you can put it in the freezer for a few minutes.

Preparation:

Add a packet of baking powder to the flour - one packet will be enough for 3-4 cups of flour. If you don't have baking powder, you can add citric acid mixed with baking soda.

Cool the margarine in the refrigerator, cut it into small pieces, roll each one in flour and carefully begin chopping with a knife. All flour should turn into butter crumbs.
Now knead the dough, add one egg and a little cold water and salt. The dough should be strong and soft, it should be well oiled so that it does not stick to your hands.
Divide the dough into two unequal parts - about two thirds will go to the bottom layer of the pie, and cool the second in the freezer.

Roll out the remaining dough on a baking sheet greased with sunflower oil, pressing down slightly with a spoon and evenly distributing the dough throughout the entire baking sheet.
Place prepared cherries on top of the dough, you can have them with pits, depending on your preference. Spread the cherries in an even layer, add powdered sugar or sugar if necessary so that the pie is not too sour.
Then grate the second part of the chilled dough and evenly sprinkle the top of the cherry filling.

Place the pie in the preheated oven. Bake the pie until golden brown and remove from the oven.

Cut the finished grated cherry pie into pieces and sprinkle with powder.

Tip: you need to cut the pie into portions while still warm, because after the pie cools, it will no longer be soft, but will acquire a harder sandy consistency.

We will need:
250 g mayonnaise
250 g softened margarine or butter
1 cup of sugar
1/2 teaspoon salt
1/2 teaspoon soda
720 g flour (4.5 cups)
thick jam, jam or jelly (at least 500 g)

Preparation:

Mix mayonnaise with room temperature butter/margarine and sugar (you can use a mixer). Add salt and soda. Gradually adding flour (3 cups), knead the dough in a convenient container (again with a mixer). Pour the remaining 1.5 cups of flour onto the table, place the dough on it, and knead with your hands.
Separate about 1/3 - 1/4 of the dough and place in the freezer until firm. Roll out most of the dough onto a baking sheet, make “sides”, add jam and smooth it out. Grate the dough from the freezer on a coarse grater and pour the pie on top.

Grated pie. Grated pie is a very popular and tasty delicacy that is very easy to prepare. Almost always, such pies are prepared on the basis of shortcrust pastry, and they invariably turn out appetizing, tender and crumbly. And they are called grated because a special assembly technology is used in their production.

The most popular grated pie is, of course, grated pie with jam, often called Hungarian. However, this is far from the only variety of such pies: no less interesting and tasty pies can be baked with lemon, apples, various berries, apricots, dried fruits, condensed milk and even mayonnaise.

The main thing in making grated pies is to prepare the “correct” dough. Usually butter is used to prepare it, but some housewives successfully prepare it with margarine. First you need to prepare ordinary shortbread dough, extinguishing soda with vinegar. And then the dough is divided into two parts and frozen. Next, the dough is placed on the bottom of the baking sheet, either rolled out or grated on a coarse grater (most often only the top layer is grated) - it depends on what kind of pie you want to bake. Place the filling on this layer (if it is jam, it is important to make sure that it is not too liquid, and if it is berries, then in order to prevent them from spreading, they are combined with a small amount of starch) and rub the second part of the frozen dough on top. If you don’t want to grate the dough, you can simply knead it into crumbs with your hands. And only after this can you send the future culinary masterpiece to an oven preheated to 180 - 200 degrees. In this case, there is absolutely no need to grease the pie pan or baking sheet - the shortbread dough will not stick to them in any case. But, if you really want, you can cover them with a piece of parchment - if suddenly the filling accidentally leaks out of the pie, it won’t burn and you won’t have to wash the dishes.

If the jam used as a filling turns out to be too sweet, you can add diced fruit (apples, etc.) or just a little lemon juice to it. An excellent solution would be zest, which can be added not only to the filling, but also to the dough itself - such a pie will turn out to be extremely aromatic.

To make the grated pie even more original, you can add chopped nuts to the top of the dough. And if you want to make it crispier, you should add a small amount of oatmeal to the dough. If desired, you can even prepare a lean version of the grated pie - in this case, the butter is replaced with vegetable margarine.
