Syrniki, or as they are also called cottage cheese, are cooked and loved in almost every family. Many remember with trepidation what magnificent delicious cheesecakes were given to us in kindergarten... So it is in my family, cheesecakes for breakfast, I cook very often, but I cook sweet cheesecakes with or without fillings, but they are sweet. Today I have prepared savory syrniki with greens, a little departed from tradition, but we liked them so much that now I’m sure this recipe will completely take root in my family.

Perhaps many of you have already cooked such cheesecakes, but still there are probably those who, like me, cooked them for the first time, be sure to cook them for breakfast or for dinner or just for a picnic ... I'm sure you will like them. For the preparation of cheesecakes, we need good dry cottage cheese, this is the most important thing in the preparation of cheesecakes and its excellent result, chicken eggs, semolina, salt, whatever greens you like, flour.

Start by whisking the eggs and salt.

Add cottage cheese and semolina. If your cottage cheese is very grainy, then wipe it through a sieve.

Finely chop the greens.

Add it to the cottage cheese with eggs and semolina and mix well. Leave for 15 minutes for the semolina to swell.

Then roll the balls while moistening your hands with water, roll the balls in flour and flatten them a little.

Fry in a hot skillet over medium heat with a little oil.

Ready cheesecakes can be laid out on a paper towel to remove excess oil.

Serve hot with sour cream.

300 g dry cottage cheese
1 egg
2 tbsp. l. rice flour (can be regular)
1/2 tsp Italian herbs
a bunch of greens (cilantro, onion, garlic)
salt and pepper to taste
1+1 st. l. olive oil

In a bowl, crumble the curd with a fork. Greens cut in small pieces. Add dry spices, salt, pepper and egg to cottage cheese. Mix well and add fresh herbs to the bowl. Mix thoroughly again. Add to curd mass flour and 1 tbsp. l. olive oil, knead the dough.

With wet hands, roll the dough into small balls, and then form them into blanks for cheesecakes.

Heat the rest in a pan olive oil and fry over medium heat cheesecakes on each side for 1-2 minutes.

Put the finished cheesecakes in portioned plates and serve with sour cream and herbs to the table!

  • 460 gr cottage cheese
  • 1 PC. egg
  • 50 gr cheese
  • 45 gr wheat flour
  • 4 green onions
  • 2 sprigs of dill
  • 2 sprigs of parsley
  • 1 tbsp vegetable oil
  • sour cream
  • lettuce

Cooking method

    Cottage cheese (for cottage cheese pancakes it is better to take dry cottage cheese without excess whey) put in a bowl and mash with a fork or punch with a submersible blender. Add 1 egg and mix thoroughly with a fork.

    Rub the cheese on a fine grater. Remove tough stems from dill and parsley. finely cut green onion, dill and parsley. Add 2/3 of the total amount of flour to the cottage cheese (set aside the rest of the flour for breading), grated cheese and chopped greens. Mix everything thoroughly with your hands until you get a homogeneous dough that does not stick to your hands.

    Form cheesecakes from the dough and roll them in the remaining flour.

    Heat up a frying pan well. vegetable oil and fry the cheesecakes over low heat for 5-7 minutes on each side.

    Cheesecakes with greens ready. Serve them warm or cold with lettuce and sour cream mixed with finely chopped mint.

Syrniki is one of my family's favorite dishes, and I almost always experiment with whatever options I cook. One of the options that I often cook is cheesecakes with green onions and dill. Yes, yes, you understood correctly, syrniki are not sweet, but salty and with a lot of greens. They are really very tasty! It is very important to choose for cheesecakes delicious cottage cheese, I think I won’t reveal the secret that cottage cheese for cheesecakes should be dry, granular. It's simple, then you don't have to add a lot of flour to make cheesecakes, and curd taste will not be lost due to this abundance of flour (or semolina, it does not matter what exactly you use). And it is desirable that the cottage cheese is not sour, if in sweet cheesecakes, this can be compensated by adding sugar, then this option is not suitable for unsweetened options. Therefore, the choice of cottage cheese is of great importance, I used non-acidic dry granular cottage cheese of 9% fat content, I do not advise underestimating the fat content of cottage cheese.

Cooking:

Cottage cheese, if necessary, knead with a crush, if it is already very coarse-grained.
Add eggs.

Whisk.
Add soft butter, flour, salt, beat.
If you do not have enough dry cottage cheese, then use more flour, be guided by the situation. I used exactly 20 g of flour.

Add finely chopped onion and dill (pre-separate it from the branches). Whisk.

You can fry immediately, or you can put it in the refrigerator for 1-2 hours, by the way, you can also overnight, and fry it in the morning.

To form cheesecakes, I don’t roll them in anything, I just form a cheesecake in my hands. Pour into a frying pan that is very hot with oil. I fry on melted butter, on butter Cheesecakes are the best! But if you fry on vegetable, then add at least a little butter to it.
Fry for a few minutes.
