Fabulous pancake salad PENEK. You will have to tinker with the salad a little, but the delight of your guests is guaranteed)

Getting ready for my sister's birthday! Insanely delicious, but you can judge the beauty :-) Our family really liked it!

The process is laborious, but the result is worth it!
Who is not afraid of difficulties? Cooking products!
For pancakes:
flour - 1 cup
milk - 250 ml (it took me a little more)
eggs - 2 pieces
ground paprika - 2 tsp
medium bulb - 1 piece
greens (I have dill)
salt (I used 1/4 teaspoon)


For salad:
boiled potatoes - 3-4 medium-sized tubers
boiled carrots (I fried raw) - 2-3 pieces
boiled eggs - 5 pieces
pickled mushrooms - I have a jar of 300 ml
fresh champignons - 150 g (you can do without them, but I added and did not regret at all!)
ham - 200-300 g
mayonnaise
greens - dill, parsley
For registration:
soft processed cheese - about 400 g (I have 2 jars of 180 g each)
pickled mushrooms
greens - dill, parsley, green onion

Let's start kneading the dough for pancakes. Mix eggs, salt, paprika and finely chopped onion.


Add chopped dill, flour and milk. I must say that I also added soda at the tip of a teaspoon. Mix well.



The dough seemed thick to me and I added a little more milk and a little vegetable oil. Pancakes baked in a dry frying pan. Turned over great! (I was a little worried - I never baked pancakes with onions :-) But in vain! The dough turned out to be very obedient) I got 9 pancakes.


And we continue the process :-) Eggs on a grater + mayonnaise, mix



We also rub potatoes + mayonnaise, mix. Dice ham + mayonnaise, mix. Mushrooms cut, fried



and mix with chopped mushrooms and herbs


Let's not forget to leave a few honey mushrooms to decorate the "hemp" !!! Let's choose the most beautiful!

Now the fun part :-) Let's start forming our "stump"!
Lay a cling film on the table or cut a couple of bags (I did just that).
We begin to overlap the pancakes, having previously greased them with melted cheese. I got a track of six pancakes. cut off the bottom edge of the pancakes.


Now let's put the stuffing in. Don't try to post it all! Mix the rest, useful for the formation of "roots"

You can roll the salad into a roll. We help with film. We accept a little, but do not be zealous! I can say that the roll is twisted quite easily. We make sure that the lower, cut off, edge is twisted evenly.

Salad "Mushroom stump" with mushrooms will make a splash at any dinner party. Cooking this salad requires strength and skill, but believe me - the result is worth it! An original, tasty, interesting and incredibly beautiful salad will decorate any table.

INGREDIENTS:

For pancakes:

  • Milk - 250 ml.
  • Eggs - 2 pcs.
  • Flour.
  • Salt.
  • Paprika - 1 - 2 tsp
  • Onion - 1 medium onion.
  • Greens (parsley) - to taste.

For salad:

  • Boiled potatoes - 2 tubers.
  • Boiled carrots - 2-3 pcs.
  • Eggs - 3 pcs.
  • Pickled mushrooms (honey mushrooms)
  • Ham - 200 - 300 gr.
  • Mayonnaise.
  • Greens (dill, parsley)

For registration:

  • Soft melted cheese.
  • Egg - 2 pcs.
  • Marinated mushrooms.
  • Greens (dill, parsley).

COOKING:

Let's start with the pancakes:

Knead pancake dough from eggs, milk and flour. Add paprika, finely chopped greens (to taste, it was not added here) and onions. We bake. We oil each pancake. From the resulting dough, about 6 pancakes are obtained.

Preparing the stuffing:

  • We rub the boiled potatoes on a coarse grater, add chopped dill and mayonnaise;
  • Grate boiled carrots and mix with mayonnaise;
  • Finely chop the eggs (or grate) and also mix with mayonnaise;
  • Finely chop the mushrooms and mix with herbs. You can add a bit of mayonnaise;
  • We cut the ham into cubes or strips. Add mayonnaise.

We proceed to the formation of "hemp":

  • We spread cling film or bags along the table. We cut the pancakes in half and lay them on the film with an overlap (set the pancakes face down and overlap so that the larger ones are at the end, if you twist the stump from right to left, then the end is left)). Spread each pancake with soft cheese;
  • We spread the filling along the “pancake track” in rows in random order;
  • After all the filling is laid out, we begin to twist everything with a roll (each filling must be pressed more tightly to the pancake) It is easiest to roll the roll according to the principle of a rug in sushi - gently pulling up and bending the package;
  • We put the resulting “stump” on a plate. We cut off the protruding ends of the pancakes - they will be useful to us for the roots.

Now let's start decorating:

From the rest of the filling we form “roots”. We decorate them with the remains of pancakes. So that the joints and “seams” are not visible, we coat the surface of the “hemp” with soft cheese. Not much!!! It acts as a binder. A kind of putty. We decorate the “stump” with mushrooms and herbs. If desired, you can also make a fly agaric from a tomato.

Ingredients:

  • potatoes 100 gr.
  • carrots 100 gr.
  • eggs 5 pieces (3 eggs for filling and 2 for pancakes)
  • pickled mushrooms 1 can
  • cheese 100 gr. (take hard cheese)
  • processed cheese 50gr.
  • milk 250 ml.
  • flour 125 gr.
  • salt 1/2 tsp
  • mayonnaise
  • greens
  • 1/2 teaspoon turmeric or paprika


Boil potatoes, carrots and 3 eggs. While the vegetables are cooking, prepare the pancake batter. To do this, mix milk, 2 eggs, salt, turmeric and flour in a deep bowl.

Bake pancakes in a large frying pan with butter. Lubricate the finished pancakes with butter. There should be 5 pancakes in total.


Cut 4 pancakes in half, and then fold them into a long chain. Pancakes should overlap a little, grease the junction with melted cheese. The fifth pancake will be used to make "roots".


Prepare the salad dressing. To do this, mix boiled potatoes grated on a coarse grater with mayonnaise, cheese grated on a medium grater with mayonnaise, eggs grated on a medium grater with mayonnaise, carrots grated on a medium grater with mayonnaise, and finely chopped mushrooms with mayonnaise.


Leave 10-15 beautiful mushrooms for decoration. Then alternately spread the fillings over the mushrooms. In total, 5 uniform layers should be obtained along the entire length of the pancake chain.


Roll up your chain. The more carefully you do this, the more beautiful the salad will be. To make it more convenient to roll, you can Spread cling film along the table. Cut the pancakes in half and lay them on a film or bag overlapping each other (lay the pancakes overlapping face down so that the large ones are at the end).


Place your roll on a platter. From the rest of the filling and from the last pancake, form neat "roots". To attach the "roots" to the "stump", use soft melted cheese, lubricating the sides with a brush.

Pancake filling options:

1-cottage cheese 300 g
salted salmon 150 g
lemon juice 1 tbsp. a spoon

How to cook salad "Stump" with honey mushrooms and ham: step by step recipe with photo

First of all, let's boil the products to save time.

Wash the vegetables well with a brush, as the root crops will be cooked in the skin.

Put the vegetables in a saucepan, cover with cold water and put on fire. After boiling, cook for about 20 minutes. You can check the readiness of root crops by piercing them with a knife.

Place the eggs in another saucepan, fill with cold water, bring to a boil and cook from the moment of boiling for 10 minutes. Then drain the boiling water away, and pour cold water from the tap into the pan with eggs.

Preparation of pancakes for salad “Stump”

In fact, you can use any, but we recommend that you bake them exactly in our way - in milk with the addition of turmeric.

Pour in warm (not hot!) milk. Mix thoroughly with a whisk.

Add turmeric and salt to taste.

Sift the flour and add to the bowl, mix well with a whisk or mixer - the dough should be without lumps.

Preparation of the Stump Salad Filling

Remove skins from carrots and potatoes. Grate the carrots on a coarse grater.

Potato tubers also grate with large holes.

Peel the eggs from the shell and grate them in the same way as the vegetables.

Cut the ham into thin strips.

Grate hard cheese on a coarse grater.

Drain the liquid from the jar of mushrooms. Finely chop the mushrooms, leaving 15 pieces for decorating the dish.

Put potatoes, ham, cheese, eggs, chopped mushrooms in a salad bowl. Salt and pepper to taste. Season with mayonnaise and mix.

Do not add carrots here.

In a separate bowl, mix carrots with mayonnaise.

Put the other half on the greased pancake and press down. Lay in the same way 8 halves in a chain, fastening them with melted cheese. 2 more halves of the last pancake will be used to make hemp “roots”.

From one edge of the pancake "track" lay out the carrots in a thin layer, as in the photo. On the rest of the pancake area, also lay the mushroom filling in a thin layer.

Recipe for salad "Stump"

Stump Salad Ingredients:

For the salad you will need:

Eggs - 3 pcs.;
Boiled potatoes in "uniform" -2 pcs.;
Boiled carrots - 2 pcs.;
Ham or sausage - 300 g;
Mayonnaise or sour cream-250-350 gr.;
Pickled mushrooms 100-150 gr.;
Dill and parsley.

Pancakes for stump salad:

Eggs - 2 pcs.;
Flour -1 cup (but in general, make sure that the dough is like liquid sour cream);
Milk - 250 ml;
Vegetable oil-2 tbsp. spoons;
Vegetable oil - 2 tablespoons;
Paprika (for a beautiful brown color of pancakes) - 1-2 teaspoons;
Salt to taste.

How to make stump salad:

Pancakes:
To prepare beautiful brown pancakes, we need to mix all the ingredients and bake pancakes, which will be the hemp trunk.
From this amount of products you should get somewhere 5-6 pancakes.
Sauce:
Mix mayonnaise or sour cream with dill and parsley. If necessary, salt.
Salad:
After grinding, we lay out all the ingredients on different plates and mix with the sauce, this is necessary in order to then lay out the salad in layers.
Potatoes, boiled in "uniform", three on a coarse grater.
We do the same with boiled carrots - we clean them.
Grind marinated mushrooms.
Grind the ham into cubes or also three on a coarse grater.
Eggs or finely cut or three on a grater.
Stump decoration:
Lay out plastic wrap on the table. Cut the pancakes in half, according to the diameter.
Grease one side of the pancakes with melted cheese. Then smeared with cheese
Lay the halves of the pancakes overlapped on the film. Cut straight edge
pancakes will be the top of the stump. On the stacked pancakes we put the filling in layers arbitrarily.
We lift one side of the film and wrap it in a roll, on the one hand it should
get a flat surface. This side will be the top of the stump. Carefully put the resulting "stump" on a plate.
If pancake tips stick out, cut them off, they will come in handy.
Next, we create roots from scraps of pancakes. If gaps are visible in some places, then coat these joints with soft processed cheese.

You can decorate the salad by setting small “fly agarics” from cherry tomato halves studded with mayonnaise dots.
